4solid smaller pan

First of all, this is all-clad, so it is built like a bank vault. The construction and fit-and-finish is what you would expect from these cookware nuts, and what would you expect for the price? Worth discussing is the quality of the non-stick finish and the usefulness of this particular size. I have been using this pan for about 2 years now. The non-stick is still like new, though you must remember to always use wooden or plastic and also use a softer scrubber designed specifically for cleaning teflon. The size of the pan is probably best for sauteeing small items to put into a larger dish, however it is also large enough to scramble 4-5 eggs or even make medium sized pancakes. As a bachelor in every sense of the word (except that I'm a bachelor that is into frou-frou stuff like cookware), it was the pan I used most. However you aren't going to be able to fit, say, a large fish filet in here, or even two pieces of bread at once (to make gourmet grilled-cheese sandwiches, duh).

Still, not for the budget-conscious. Is it worth it? If you are a starving chef check out the Cuisinart Everyday Stainless line and hope it's on sale.

5Excellent Nonstick Fry Pan

Not only is All Clad stainless cookware superb, the nonstick is superb as well! I am not a fan of nonstick in general however I make an exception with fry pans. Eggs and cheese are just so much healthier when they are cooked with less oil. That being said I have the 7, 8 & two of the 10 inch All Clad nonstick fry pans and I couldn't be happier with them. I have 2 of the 10 inch so I can make two 3 egg omelets at the same time. I find the 10 inch is perfect for 3 eggs, my husband and I prefer our omelets loose or slightly runny versus dry and this is a great size for that, it is also great for several scrambled eggs or breakfast sausage. The 8 inch is perfect for a 2 egg omelet or scrambled eggs and the 7 inch is perfect for 1 or 2 eggs or sausage.

All Clad fry pans (and the entire All Clad cookware collection) are first class, top quality, well made, designed to last and come with a lifetime warranty. Make sure you only use silicone (my choice), nylon or wooden utensils and hand wash only. The hand washing is a breeze since this nonstick collection is made so well... All Clad makes more sense for your wallet and the environment and wouldn't you rather use "crème de la crème" professional quality cookware than junk? I know I would!

5All-Clad True

It's no secret that I love All-Clad. The 8-inch is perfect when cooking for one or two. The pan has great release. I always hand wash and about once a month, I polish the stainless steel with Bar Keeper's friend to keep it looking like new.I also have the nonstick 10 inch and I am trying to send it back to All-Clad for warranty evaluation. I did not know that you shouldn't use nonstick spay with nonstick cookware and that the heat should be relatively low. I never use more than medium heat with any of my All-Clad and yet my pan lost its nonstick properties.When a plan losses its nonstick properties, All-Clad suggests cleaning with a paste of baking soda and water. If the baking soda doesn't turn brown, switch to Bar Keeper's Friend and water. Always scrub with something made for nonstick cookeware. None of this helped my pan, so I will send it in to All-Clad.

3Handle could be much better

I found the handle to be extremely uncomfortable in the hand. It is too narrow and the deep groove digs into the hand. For this money, it should have a better designed handle, something more ergonomic: solid and round and contoured for a better and more comfortable grip.It's a pity, because otherwise it's a superb pan.

4Might be good but, healthier?!?

I really have to question how the other reviewer managed to conclude that food cooked in the Master Chef is healthier than food cooked in a traditional steel wok. Since this pan isn't nonstick, you'll have to use as much oil or even MORE oil than in a carbon steel wok to cook, because carbon steel absorbs oil as it becomes seasoned and over time becomes far less sticky, and thus requires less oil to cook with.I'm not saying that this ultra-luxe pan isn't a great pan, but don't expect it to cook healthier food just because it uses multiple metals or costs several times as much as a cheap traditional wok. It's also questionable as to whether this pan transfers heat better than a traditional carbon steel wok, since the reason the aluminum core is inserted is partially because stainless steel doesn't transfer heat as well as regular carbon steel, so the aluminum is inserted to compensate. It might be true that the aluminum actually enhances it enough so that it can even beat out carbon steel, but I have my doubts.

5Great for more than stir fry

I was given All Clad Master Chef pans as a wedding gift 21 years ago and they still look fabulous (they hang from a rack). The chef's pan is versatile and one of my favorites; e.g., with the flat surface, I'll make some sauces for pasta in this pan and put the cooked pasta in the pan to toss (keeping everything warm); deep fry foods like calamari. I also think the long handle is much easier to handle than the traditional side handles on a wok. You cant' go wrong with this pan.

3Very nice wok for the right style chef

I purchased this All-Clad wok as a Christmas gift for my wife who had just moved from China to America. She had been using a carbon steel wok for the previous year. We purchased it new when she arrived and she went through seasoning it and making it her own as a kind of nesting ritual. I thought a smaller, high-end, All-Clad wok would be a nice gift, since she cooks for the two of us and doesn't always need such a large wok for our food.This wok is an outstanding piece of cookware. It's solid, nicely weighted, and a very high quality of construction. Unfortunately, it caused real problems with my wife's style of cooking.In China, the wok is typically heated to a very high temperature. Food is tossed in and cooked rapidly, sometimes the top is put on (this wok doesn't come with a top, by the way, so plan to purchase one separately), and food is left to simmer. Due to the high level of heat my wife uses, food chronically sticks to the bottom of the wok even during the process of sir frying and mixing the food around. A thin layer of food sticks to the bottom and builds by the minute. It also becomes very difficult to clean. We don't want to excessively scratch the bottom of the wok, so long-term soaking is required followed by gentle cleaning. This is especially true when using rice in the wok. It frequently sticks like a rock to the bottom of the pan.So my wife has gone back to her well-seasoned, four+ year old Joyce Chen steel wok, which works perfectly for her. It's kind of ironic that the best wok for her is one of the cheapest--just a well-seasoned carbon steel wok. It doesn't stick and it accommodates the high-heat style of cooking that she's culturally used to.I don't want to give the impression that I'm faulting All-Clad. I think this is a limitation of using a stainless steel wok as opposed to a seasoned carbon steel wok when cooking at high temperatures. I just want to relay to others who may share the same cooking style as my wife, lest you purchase this wok and end up having the same problem as she did.So, for now, this wok sits in its box on a shelf awaiting a gift to a new owner. Our current problem is, all of her friends are Chinese and none of these Chinese ladies want a stainless steel wok. So we'll wait until the right person comes along and pass this All-Clad wok to them.

5Successful Member of Successful Product Line

The 12 quart stock pot is the big brother to the 6 quart Master Chef 2 stock pot I got a few months ago to replace both a 5 quart teflon lined pot and my 8 quart Le Creuset Dutch oven. The 6 quart stainless steel lined aluminum body fit the bill perfectly, so I had great hopes for its big brother. And, the 12 quart has come through with flying colors.I started getting Master Chef 2 from all the different All-Clad lines because that seemed to be the standard of choice on the Food Network's 'Iron Chef America' show. And, while I know it is not the most expensive All-Clad line, I'm also sure that they would not have chosen it if Bobby and Mario would have had any problem with it.I also picked this particular pot because although it is labelled a stock pot, it does not have quite the classic high height to radius ratio, so it is not so high that it is hard to work with, especially when you are using it for soups. When I use it to make stocks, it has the one quality I want most, especially with an electric range, and that is control. Stock temperatures seem to respond quite well to changes in burner setting and I get no hot spots causing boiling when the overall temp of the stock is below 200 degrees Fahrenheit. Best of all, it is not extremely heavy, as it weighs less than the 8 quart Creuset.A bit pricy, but an excellent member of its family of pots!

Amazon just kinda threw mine in the box with some wadded up paper in one corner, and needless to say the contents were not treated gently by FedEx. Despite the fact that the packaging was in shreds when I opened everything up, the pot itself showed no signs of damage--which is why you buy an All-Clad in the first place.You can get a solid aluminum pot that performs about as well for less than 1/4 of the price of this one, but then you can't cook tomatoes in it, so the stainless steel interior comes in pretty handy. Heats up quickly and evenly, and that's really everything you need a pot to do, so I have zero complaints.

5All-Clad Pots are tops!

All clad pots are wonderful. The shorter pans with thick-cored bottoms make excellent jam pots as they deliver very good heat distribution. Good heat distribution is necessary for cooking full-flavored jams, preserves, or butters. Without good heat distribution you run the risk of burn spots on the pan's surface. These burn spots may/will impart an unwanted flavor to your product. If you've ever tried to disguise burned jam-- you know it's a losing battle. While some cooks may consider All-Clad pots or pan to be too expensive, I believe they are well worth the cost as you are less likely to burn your product. One good pan is worth more than six cheapies. Besides, quality equipment instills confidence and makes you feel like a seasoned chef.

5ALL-CLAD TURNED ME INTO A CHEF

I thought I couldn't cook -- until I started using All-Clad. I kept scorching the pudding and didn't realize it was my old, thin stainless steel pans with the copper bottoms that was the problem. (You know the ones I mean.)

All-clad pans are wonderful. They conduct heat well, clean easily, and are heavy enough to avoid scorching problems. I recommend them to everyone. I have an assortment from the 2 qt. copper saucier for delicate sauces to this useful aluminum exterior clad 6 qt. pot that I use for absolutely everything, from spaghetti sauces to chili to pot roasts.

This 6 quart beauty is the first piece of All-clad that I purchased over 10 years ago. It is also the pot I use most often and I have no trouble keeping the aluminum clad exterior clean enough to hang on the wall.

Furthermore, I know from first hand experience that the All-clad company stands behind their product and will replace them if there is a problem. The only exterior that I don't have much experience with is the LTD. I bought one of the 1 qt. bargains -- and so far it has not scratched although my use has been very light. (I find it a little too small to be really useful.)

Just what I needed for batches of chili, soups and stews. I can brown the the meat and aromatic vegetables in the pan, and then add liquid, making these dishes truly one-dish. Browning is excellent, and if one keeps the stainless lining polished and heats up the pan thoroughly, the food releases easily. It also builds a nice fond, and unlike some of the newer non-sticks, you can deglaze this without damaging the pan. Finally, I had thought to buy a less expensive brand of stainless pan, but the MC2 was dead flat on my glass top stove, and lighter too.

5I love this stockpot!

I was tired of our non-stick stockpots losing their coating. I decided to go big and purchase this pot after I had purchased an All-Clad tea kettle. I like pretty things, but want them to function and hold-up. This pot is used for soups mainly. I just put it into the fridge after each meal until the soup is gone. It cleans up well and if I need to, I will use the Bar Keeper's Friend. While you may not have to do that with a non-stick pan, you will be replacing it after while. I will NEVER have to replace this pan.

5Performs like a champ!

When I saw the size of this pan, I wondered if it could possibly work well on a conventional-sized gas burner. Or would it just heat the center of the pan with the outer areas relatively cool? The clerk at the store assured me that it would heat evenly because it has an inner core of pure aluminum besides the exterior of brushed aluminum to help it conduct heat all the way up the sides, too. I took a chance and purchased this pan. It is great! I cooked one of my favorite recipes--chicken marsala--in it and it performed flawlessly. The bottom of the pan heats evenly with no hot or cold spots. It is heavy enough that you can use high heat with no fear of the pan warping. You can cook at low temperatures and feel confident that the pure aluminum core will spread that gentle heat evenly all across the bottom and up the sides of the pan. It browns beautifully and the mirror-smooth stainless interior is easy to clean. The lid fits snugly and keeps those precious juices in your food.

For those who have never tried one of All-Clad's fine pans, here are a few tips. To prevent meats from sticking be sure to preheat the pan properly for at least a few minutes and do this on the same heat setting that you intend to use while browning your meat. Add the cooking oil (not a cooking spray) after the pan has heated. Use an oil that has a high smoking point like vegetable oil, peanut oil, or even light olive oil. Extra Virgin olive oil has too low a smoking point to be used for pan searing meats. Don't put cold meat in a hot pan for searing or it will stick. Let the meat sit out at room temperature for 20 to 30 minutes before you begin to sear it. Pat it dry with paper towels to be sure it is not wet (that causes sticking, too). The pan should be hot enough that you hear a nice, loud sizzle when the meat is placed into the hot oil. Leave some space around individual pieces of meat to allow moisture to evaporate. If you crowd the pan, your meat will stew, not brown, and it will be tough. Don't poke or move the meat around once you have put it into the pan or it will not properly sear. Right after you place the meat in the pan, you may notice that it is sticking to the bottom of the pan. Don't panic! That is how the meat surface becomes properly carmelized (browned). The meat will tell you when it is properly seared because it will "release" from the bottom of the pan and can be easly moved and turned over. Repeat this searing process on the other side.

DEGLAZE! This is an important next step: remove the browned meat from your pan, pour off any excess oil that is left in the bottom. If you see a hardened brown crust on your beautiful pan, no worry. Just deglaze the pan by adding some wine, stock, even plain water, and stirring over medium heat to loosen those crusty patches. This process only takes a couple of minutes. Keep stirring to loosen anything that is stuck on the bottom of the pan, then you can add extra ingredients, return your meat to the pan, cover with the snug-fitting lid and braise or simmer to delightful tenderness.

When it's time to wash the pan, hot sudsy water and a little Barkeeper's Friend scouring powder will restore the pan to like-new brilliance.

The only down side to this pan is that its slim handles make it difficult to manipulate. And you will need a pot holder or oven mitt to protect your hands from the "helper handle" (which does get hot) and the handle on the lid. The long, stay-cool handle will be just fine for stove-top use unless you put the pan in the oven.

5The BEST and ONLY pan no kitchen should be without!

Of the top 5 pans that no kitchen should be with out, the ALL-Clad MC2 saute pan is tied for number one in my book. Not only does the Master Chef 2 line cook better then ALL-Clad's "bread and butter" stainless line, it's also less expensive. Sauteing, shallow frying, poaching, steaming, you name it this pan can do it. I'm not a big fan of buying cookware sets, and that's why i purchased this pan seperately and paid the price, but its worth every penny. Cooking in this saute pan produces an incredible "fond" (little bits of food particles), that when deglazed, produce an extraordinary pan sauce. This is something I would NEVER want to cook without. In fact, I plan on willing it to my children so they can have the same enjoyment that I have had.

5My most used pan

This pan is great! I use it on an almost daily basis for sauces, stir fry, and the like. High sides keep the sauce in the pan and off the stovetop. Cleans easily. This pan and the 6 quart saute pan are the two pans I use the most.
