5Keeps my Global knives fiendishly sharp

This is a steel made expressly for Global's Cremova 18 and Molybdenum/Vanadium stainless steel blades which is harder than the average German stainless steel. Together with the Shikansen sharpener, it keeps my knives as sharp as the day I bought them with minimal effort. It's expensive, but a good investment.

5Keeps my Global Knives sharp

This works much better than a normal steel on my Global knives. Can't think of anything wrong with the diamond steel. Sure it isn't inexpensive, but I've got some diamond tool sharpeners for the shop and they aren't cheap either.At some point, the diamond steel won't be sufficient to bring back a good edge. At this point I bring out the Yoshikin MinoSharp Water Knife Sharpener to reform the edge and follow this up with a couple of strokes on the diamond steel. Not factory sharp, but certainly sharper than when I started. :-)

5Worth the $

I have to admit that I initially grimaced at the idea of spending over $100 for a knife sharpener. But after splurging on several Global knives I didn't want to skimp on the sharpener. Two or three swipes on the diamond sharpening steel and the knife is as sharp as a razor. Yes, even Global knives will loose a little edge with normal use. This is a must have for keeping them honed.

5The best knife that I have ever had!

I was given this knife as a birthday gift six months ago. It is absolutely wonderful! Perfectly balanced, sharp, and nice to look at. The fact that it is so well balanced makes it extremely easy to use. Slicing watermelon or cutting sweet potatoes requires hardly any effort any more! All I have to do is let the knife do the work. Chopping vegetables for a tomato sauce is a cinch with this knife. I have a large family and it is not unusual that I have to prepare dinner for 12 to 15 people and this knife has made it easy for me. I intend to get a full set of these knives eventually. In my opinion, there is no comparison to my Sabatier chef's knife.

5I LOVE THIS KNIFE

The first time I used this knife, I knew from that second that this would be one of the most treasured items in my kitchen. I LOVE it. I have Henckels & Wusthof knives, but this knife is by far the best. When I prepare a meal, my favorite part is when I get to use my knife. I cannot possibly express to you how truly wonderful this knife really is. Buy it! Buy it! BUY IT! You won't be sorry (except when you aren't paying attention and cut yourself)! I only wish I had the money to purchase a whole set; I will one day...Update: I also purchased the "Global 10-Inch Diamond Sharpening Steel" and WOW - it's amazing. If your knife is a little on the dull side, run it over the sharpener a few times, and BAM! It's as sharp as it was when you bought it. Simply amazing.

I own 30+ kitchen knives in many different shapes and sizes from a dozen different manufacturers and this is by far my favorite knife. I don't know how it does it, but this knife slices so effortlessly through vegetables, fruits, and meat it's almost unbelievable. Worth every penny.

5Great Knife

I love this knife!!! I have small hands and the size doesn't bother me at all. Global knives are the best. The handles are the most comfortable I've ever used. I have other knives, but I have a tendency to go to my Globals more. This carves through frozen chicken like butter. Unbelievable.....love it!!!!!

5Wonderful honing rod for any knife, global or otherwise

As a professional chef, I have used quite a number of steels, and I must say that this is the best 'steel' I have used. The ceramic does a wonderful job of honing my knives to a perfect edge and I like that you can buy replacement ceramic in case you drop it or break it somehow. I would definately buy again.

3An okay deba...

Professional cook here. I don't use this knife as an all purpose knife. It wasn't intended to be one. I've tried to, but it doesn't work very well as one. It being single bevel, it tends to make the wrist turn while cutting hard objects like carrots, which is why it shouldn't be used in place of a chef's knife. Debas are meant to be used for breaking down whole chickens (not cutting the bones though) and butchering fish (can cut fish bones).While the Global deba (and all Global knives in general) is very sharp out of the box, it is because of the concave edge they put on it, not the traditional V edge. It stays sharp longer, but without special equipment, one cannot sharpen Globals to the same factory edge with just sharpening stones.I don't see how Global can really classify this knife as a deba though. It's too thin to be a real deba and rather light. Debas are usually twice as thick and have a tougher edge, rather than the delicate edge on the Global deba. I had to sharpen this knife to a more obtuse angle to use it for its intended purpose because the edge kept on rolling or chipping. Plus, it's rather expensive. There are much better debas out there made with better steels for the same price or cheaper. I applaud Global for being unique in their designs, but function over form is extremely important with knives in the professional kitchen. A deba is meant to be used and abused with no babysitting.

5My favorite knife

This knife is simply a joy to use. It's nicely weighted, but not heavy. It feels great in your hand. And it's the sharpest knife I've cut with. It is beveled only on the right side (the side you see in the photo), while the other side is flat. This shape causes what you are cutting to glide neatly off to the right. The Deba is especially fine for cutting fish for sushi or sashimi, or even that basil chiffonade. I find myself using it for almost everything. As long as you're not left-handed, you won't regret this purchase.

5An Excellent Investment

As a professional chef, I have had the opportunity to work with just about every brand of knife out there. Recently, my very first chef's knife which I had purchased 22 years ago, was stolen along with the rest of my equipment. It was one of the original Henckels 8" chefs's knives with a nice, thin bolster which is so hard to find nowadays. Unfortunately, the current trend is to make them thick and heavy. Originally, I had replaced it with a Wustoff Classic 8", which is a great knife, but the heft kept throwing me off and slowing me down. On my sous chef's recommendation I decided to check out some Global knives.The Global Deba is the first knife by this manufacturer that I have ever tried, and I am very impressed. My first impression was that it was way too light, and that the handle was designed for someone with small hands. That opinion changed the moment I gave it a test run on some zucchini. It is lightning fast and razor sharp, and the balance is perfect. I now realize that a thicker and heavier handle is necessary for control when you have a thick bolster. This is the perfect light all-purpose knife for any professional chef. The only thing I wouldn't recommend using it for is breaking down a whole chicken. You need to rely on the weight of a traditional knife for that. Give it a try and you will not be disappointed. I highly recommend it.

5The perfect sushi knife

This knife is the ultimate in slicing raw fish. The square tip is in the "Osaka style", which makes it a little more unique than other traditional sushi knives. The all stainless construction means easier maintenance, since most sushi knives are carbon steel and rust and stain easily. Balance is never, ever a consideration with sushi knives. They are not made for chopping. The long blade is designed for extended blade strokes while slicing through fish or vegetables. This knife gets lots of use at our house, even in slicing bananas for morning breakfast!

3This Knife Was Missing Two Things...

...an edge, and good balance.

The fact that this knife came out of the package dull is something of a puzzlement to me, considering its cost. It did take an edge very quickly with a couple of passes over the steal, however.

The handle is very light weight hardwood and the black bolster is some kind of plastic, nylon I think, so the center of balance is too far out on the blade. I've had to Krazy Glue several American dimes to the butt of the handle to achieve proper balance (painted black to accent the bolster). The handle is also very short, not particularly designed for people with large, or even average sized hands, in mind. Keep in mind the stature of your average Japanese, I guess. Not meaning at all to be offensive, but my big American hand isn't afforded a real margin of comfort here.

I'm keeping this knife. I like the single-grind edge, which is also very straight - really ideal for certain jobs. I don't see this as fulfilling the role of an all-purpose kitchen knife though. But, then, that's not why I bought it.

I think the best thing about this piece, aside from its specialized application, is just its plain good looks. Sounds shallow perhaps, but this thing is really pretty. So, sometimes form outweighs function. I can live with that in this instance.
