Thsi pot is the ideal size for boiling up to a pound of pasta, making soups, casseroles, or anything that needs to start on the stove and go into the oven. I use it at least once a week. It only measures 8" wide so it takes up very little shelf space. A great piece of equipment, in my opinion.

5Just right for soup making and small batches of pasta

This pot has been a welcome addition to my kitchen for serveral reasons.It's a great size for making soups. The tall sides and relatively narrow width assure minimal evaporation; the heavy All-Clad bottom means that there are no hot spots. Some of the recipes I use begin with "blooming" spices in a bit of oil and softening onions and/or garlic, too. There's no worry about scorching.For our empty nest, it's just the right size for preparing pasta, too. Smaller pots don't hold enough water to cook the pasta without it sticking or becoming gummy; larger pots -- well, who wants to boil eight to twelves quarts of water just to cook less than a half pound of spaghetti? This pot is the perfect "between" size.I'm not sure why All-Clad calls it a casserole pan. Casseroles are one thing I don't imagine cooking in this pot. But I'm glad I ignored the name and decided to give it a try for the tasks I've described. It's perfect.One other thing. Finally I've begun acquiring heavy, GOOD pots and pans. What a difference these make. It's wonderful to be able simply to cook without having to fight one's equipment. I never realized how much difference it would make, not only in the quality of the results, but also in my enjoyment of the process of cooking. Buying a cheaply made pan or pot is a false economy, one that will never again tempt me.

4Sturdy, but more stockpot than casserole

I like the "Master Chef 2" line of All-Clad products. They have an attractive brushed aluminum exterior with stainless steel interior and lid. They have a solid aluminum core that not only fills the bottom but also extends up the sides, so you get even heating of your food. The lids fit well, you can use metal utensils on the cookware without damaging it, and the smooth interior cleans fairly easily. The cookware is durable and will last for years without incident. If you drop it, you're far more likely to hurt your foot or the floor than the pot! The handles are riveted on very strongly, and we've never had a handle show signs of giving way or pulling loose. We've had our All-Clad items for years and they're in fantastic shape.Technically you could put your MC2 cookware in the dishwasher, but it isn't recommended. Not only would the 5-quart casserole not really fit very well (it's a bit tall) but this can eventually ruin the nice finish, causing discoloration. This is one of the real down-sides to All-Clad cookware in an age when most new cookware is dishwasher safe.I also find that the 5-quart casserole (I actually think of it as a stockpot because it seems closer to that in shape) isn't the most useful size. It seems like most of the things we make need to be in a smaller or larger pot; there are few things that fit perfectly in a 5-quart pot. The one thing this pot does have going for it, however, is that aforementioned shape. The tall, comparatively narrow shape of it means that if you're cooking something that you want in a large pot due to spattering worries, but that you want in a narrow pot because you aren't cooking much of it and don't want to burn the bottom of it, this is one pot that'll do the job well.

4Amazing performance at a better price

If you are a serious cook who wants serious quality cookware, then All Clad is a great option. If you are not 100 percent familiar with All Clad, here is a brief description of what you can expect from them...All of their lines have a full aluminum core (which provides excellent heat retention and distribution) and stainless steel interiors (which offer an easy to use, non reactive cooking surface). It is the best of both worlds combined in one piece of cookware. The difference between the various lines of All Clad is simply the exterior surface...stainless steel (obviously their Stainless line), anodized aluminum (the LTD line), Copper (Copper Chef line), Stainless with an added layer of copper in the core (Copper Core), and brushed aluminum (the MC2 or "Master Chef 2" line). They are all, in my opinion, excellent cookware, but each one has its advantages and disadvantages. The advantages of the Master Chef 2 line, which this saucepan hails from are:1)The brushed aluminum exterior gives it added thickness and heft. In my opinion, this provides better cooking qualities than most of the other AC lines (except for the LTD which is even slightly thicker). While all lines of AC perform beautifully, I feel MC2 has slightly better heat retention and distribution. I enjoy the cooking experience a little more with MC2 than I do with the stainless line.2)It costs less. I think we all agree that's an advantage!However the main disadvantage of the MC2 line, in my opinion, is strictly cosmetic. Straight out of the box, the saucepan will look beautiful, but over time, it's exterior will undergo intense marring. It doesn't matter how much you baby your cookware, these pans scratch horribly and discolor very easily. I don't care what anyone says...I have tried every trick in the book to rid my MC2 of their ugly discolorations, and nothing works. And as far as scratches go, once they're there, they are there for good. If looks are a big issue with you and/or you keep your pots and pans on display in your kitchen, bear in mind that these pans take quite a beating. These just will not have the striking beauty of the stainless or copper core line.As far as this particular saucepan, it's definitely a winner. With the thick aluminum core and exterior, you will definitely enjoy the performance that this pan will offer you. Your sauces won't scorch as easily as lower quality pans and you will find you will have much more control over your cooking with a pan like this. It is certainly a joy to cook in it, as is all of All Clad cookware. And the accompanying stainless steel lid is durable and tight-fitting, everything a lid should be. Do bear in mind that this saucepan is not like a typical two quart saucepan. Most 2 quart pans are wide and short. This pan is tall and narrow. (It doesn't even measure 6 inches across and is smaller in girth than my 1 and a half quart saucepan). The advantage to that is you will get less splatter and less evaporation with a pan of this shape, but to me, the narrow girth of this pan is a distinct disadvantage. I cook on Thermador burners which are very wide. The flame on my burners completely devour this pan and I have to use a medium to medium low heat setting at the most or the flame will lop up the sides of my pan. If you have pro appliances with wide burners, then this will be an issue for you. You will either have to use a low flame or invest in a simmer plate. This fact, along with the exterior marring, is what made this pan lose a star for me. However, if I were to rate this pan solely on performance, then it would earn five stars all the way! Even with the drawbacks, I'm still a very proud owner!

5All-clad does it again!

I have about 7 All-Clad Master Chef2 pans and I love each one! This pan has been extremely useful in heating up sauces and small soups. It's my favorite pan to heat up a jar of pasta sauce. I highly recommend it!

4All Clad 2-qt sauce pan

I am not as thrilled with the 2-qt sauce pan as with other sizes from All-Clad. I have the 1.5, 2 and 3-qt versions, and all are well made, beautiful to look at, and heat up and hold heat beautifully. My only gripe with the 2 qt model is that it is too small a diameter pot, just a taller version of the 1.5 qt. It would have more utility for me if it were the same diameter as the 3 quart. I have a Thermador gas range, and I have to set this pot on the small diameter burner, at a very low setting to keep the flame from curling around the edges. this is fine when I am boiling a small amount of liquid in the 1.5 pot, but with a larger volume of water it takes longer to heat.I have a mixture of saucepans from the brushed-aluminum exterior MC2 line and the stainless exterior lines. I like them both. Perhaps the brushed aluminum bottoms may prove harder to keep clean than the somewhat more expensive stainless models, but so far I don't have any problems that way.I also purchased Bar Keeper's Friend as a cleaner/polisher, based on a previous reviewer's recommendation on Amazon. I indeed found it next to the Ajax and Comet at my supermarket. It does a beautiful job of making my pots look sparkling!

5All-Clad is the best overall.

The ongoing debate over cookware at my house is over: All-Clad is the best cookware overall and is worth the extra money. Our coppers tarnish and require retinning. Our encapsulated disk cookware (Reverere and Farberware) suffer from loose and broken plastic handles and too-small disks which limit the cooking area of the fry pans. The biggest debate was between Calphalon and All-Clad LTD nonstick models. My wife really liked the lighter weight of Calphalon's Commercial Nonstick line. After living for both for several years, All-Clad has shown its overall superiority in the following ways:1) Durability. The non-stick finish All-Clad uses wears like iron. The Calphalon's finish shows many more scratches and blisters.2) Denser anodized finish. The All-Clad LTD finish is much denser and more even that that on Calphalon. This makes it more attractive and easier to clean. On the MC2 stuff the finish is not anodized, but it is tightly frosted and well made. It's quite attractive too. I've started to accumulate MC2 stuff because it's cheaper and performs just as well. The LTD stuff does look better on a rack mixed with Calphalon. It's tough to beat black aesthetically.3) Greater heat sensitivity. You actually cook with the stove set to a lower temperature with All-Clad. It appears to register changes more quickly. Both types of pan are good in this reguard - but the All-Clad is noticeably better.As a fry pan, the All-Clad MC2 12" fry pan hits on all cylinders. It's big enough for a 4 egg omlette, or most of pound of bacon. It's battleship built, well balanced, even heating with great sensitivity. The handle stays cool and is angled so that you can lift the heavy contents without undue strain on your wrist. The nonstick finish is effective and tough as nails. The MC2 finish is durable and very attractive. Ultimately I'm more partial to the LTD finish because it matches well with other anodized aluminum cookware - and you can clean it very effectively with Ajax. The MC2 finish will yellow a bit over time. Real chefs just let it get brown. It looks like real cookware. In any case, exterior aesthetics don't relate to cooking performance.Update on the MC2 finish: after using it for months and letting it get nice and brown I tried cleaning it with the 3M scrubby and Ajax/Comet cleanser I use with the LTD finish and it worked like a charm on the MC2. Just make a nice paste and power away the burnt on grease in moments leaving a nice buffy shine. Don't worry about scratches - the MC2 finish is a fine patina of minute scratches anyway! It looks great and is basically indestructible.

3Warranty problems

I have a full collection of All Clad pans, and recently returned the 8" nonstick pan as it sticks terribly even with quite a bit of oil. Mostly used as an egg pan, always hand washed and never in the dishwasher but has been around for years. I returned this pan under lifetime warranty over two months ago and still it has not been replaced. I have called and emailed, and still am not sure if it has even been sent out to me. I was asked for the USPS confirmation number for the return, thank goodness I paid extra at the post office for this and have saved it. That was weeks ago, making me thinkthey had lost my return. Called again today as still no pan, and got no information when it is coming but the promise to call back about it. Don't know that I would spend almost $100 again for an egg pan with this kind of service. I would expect better service from All Clad than this.

4maybe we love it too much...

My wife and I bought a set of Master Chef (before there was MC2) pans 3 and a half years ago, and the 10" N/S skillet was the best part of it. All-Clad is heavy stuff, no hot spots or cold spots. I love every piece that I own, and have been completely satisfied with the set, except that now, the exterior of the pan is discolored (I really don't mind that part, it just means that we love it; and no, we haven't used it on a gas range), and the non-stick surface is not so non-stick anymore. I cooked salmon, of all things, an oily fish(!), in a dry pan, and it stuck. Maybe we've just worn it out, but my next non-stick pan is still going to be All-Clad.

This pan has replaced my iron skillet and my 3 qt saucepan. With its heavy construction, it cooks so evenly; I don't have any scorching while simmering. With the interior being stainless steel, there is none of the iron taste that comes from an iron skillet reacting with food. This pan is perfect in size and depth for sauces - cooks faster than a saucepan. All cooks need their main pan to be of this quality and it's so beautiful. With the lifetime warranty I feel secure in spending the money.

5The only pot you need in a small kitchen

When I started law school, I moved into a studio apartment with only microwave pots to cook in. After a year, I decided that some better form of food was necessary. I first got an All-Clad 1-quart saucier, and then I got this amazing pot/pan. I need nothing else. It warms quickly and evenly and cleans beautifully. At first I choked over the price but I bit the bullet and got it. The cost is, granted, about the same that one can pay and get a whole set, but I've had those inferior sets before. They've gotten thrown out in a year or two because they're worth exactly what I paid for them. Should I ever actually need another pot, I won't look at anything but All-Clad cop-r core.

4Good quality, but not perfect.

This pan is of top quality. Heating is rather even due to its special constraction. The 12 inch size is perfect for preparing meal for 1-4 persons. The handle will never be hot however the handle of lid could be hot if cook long.CON: When stirring fry eggs or meat, this pan is really sticky. I changed from high heat to medium heat and added more vegetable oil and these won't help that much.

5I love this multi-purpose pan

I bought this pan five months ago and have not regretted it. It was the first piece of All Clad Copper Core that I purchased and I have purchased five more pans since! First of all, the pan looks beautiful and you can put it in the dishwasher. I clean it with powdered Bar Keepers Friend (sells for $2 in Publix) and then put it in the dishwasher. My dishwasher has a sanitize cycle, so I prefer to put as many things in it as possible that do not require hand washing.I have cooked a variety of things in this pan: Fried items, sautéed items, marinara sauce, stews, soups, etc. Basically, it is a great multi-purpose pan - and unusual. You will never find this style of pan in a set that you would buy. I am not into Asian food, but obviously if you like that, this pan would be perfect for stir frying. It holds quite a bit of food and the loop makes it easy to move from the stove to other areas of the kitchen if you need to. The lid is high doomed so moisture will stay in as well. I really do not think you can go wrong with this pan. I own the 10 inch fry pan, but find it's not necessary to purchase the 12 inch since I have the Chef's Pan.

5Best of Dutch Ovens

Some years ago I was a professional chef, and I approach cooking in an analytical way, (cooking is science, plating is art). I learned the real value of slow cooking of some foods, especially in classical cuisine and much of ethnic cooking. The trick is a specialized slow-cook oven (expensive restaurant equipment) or a well-made Dutch oven. Assuming you are not reading this from the kitchen of a three star, the obvious choice is the Dutch oven.

My first really usable Dutch oven was a 50-year-old one, 18 pounds of solid aluminum! Eventually it pitted as to become unsafe. I've tried many of the current crop, and was very disappointed at the uneven heat distribution, with the propensity of food to caramelize and eventually burn at the transition point between the flat bottom and the sides (the metal thickness at this point is critical). In my testing, this pot is far and away the best designed, finished, and certainly the best cooking Dutch oven now being produced.

I purchased this item, and am thoroughly satisfied. The price for this superior "slow cooker" is steep, but if you really know how, and when to use this pot, you will marvel at the results, and it really beats the price tag of the restaurant "slow oven!"

Worth the price, and is in my opinion the best by far of all the offerings, spring for one, then really enjoy classical cuisine as it was once prepared!

5Not Just Another Pot

Using anything as finely made as this is an education. Food cooks differently in this than it does in anything I've used previously. The level of control this allows is amazing, and the key to this is just how forgiving the cooking surface is. There are absolutely NO hot spots. You burn the stew in this pot, you may as well hang it up and condemn yourself to fast food. This 5-ply pot is the best thing that's ever happened to my kitchen.

This is the highest expression in cookware.

Yes, buy this dutch oven. I own over a dozen All-Clad pieces and this is far and away my favorite. It's impossible to burn food in this oven. It cooks so evenly and makes heavenly stews, pot roasts, etc. I start my stews and roasts on the cooktop and finish in the oven at 325 degrees for 1-2 hours. Everything comes out perfectly. This All-Clad piece cleans up very easily. If there is any food particles that my plastic scrubber doesn't remove, an hour's soak with 1/2 inch of vinegar in the bottom of the oven makes it like new. If I had just one piece of cookware to take to a desert island, it would be the All-Clad Copper Core Dutch Oven. If I had two pieces to take, I'd add my All-Clad Copper-core 10 inch fry pan.
