Product Description

Long appreciated as both a cooking and serving dish, the terrine was traditionally used to compact a forcemeat mixture like pâté (resulting form is also referred to as a terrine). Some terrines include a weighted press that molds the mixture from all sides. As the meat cools, the fat contained within it begins to set, helping the terrine hold its form. Drawn from early Le Creuset designs from the 1930s and 1940s, this cast-iron pate terrine also works well for baking cakes, breads, and lasagna, or for assembling a frozen dessert of sponge cake and ice-cream layers. The elongated rectangular-shaped dish measures 4 by 12-2/3 inches and can hold up to 1-1/2 quarts.

Like other pieces in Le Creuset's line of enameled cast iron, the cookware's exterior features a colorful, long-lasting enamel that resists chipping and cracking, while its durable, nonreactive sand-colored enamel interior offers a smooth surface for cooking and an optimal palette for food presentation. As cast iron is unexcelled for even heat distribution and superior heat retention, and enamel is impervious to acids and odors, the dish cooks food uniformly and gently without hot spots and can be used for marinating, cooking on the stovetop, or finishing in the oven. 5Pate Terrines and so much more, this is yet another versatile Le Crueset product.

Le Creuset manufactures porcelain enameled cast iron cooking vessels as well as other products. Le Creuset casts these cooking vessels from molten iron poured in sand moulds that are used only once. For this reason, one pot may look like another, but each is unique in its own way.Cast iron is a highly efficient material which absorbs and distributes heat efficiently. For this reason, it is recommended that cooking with cast iron is done on low to medium heat. There are exceptions like boiling water where cooking on high heat is appropriate and okay. Removing cast iron from the heat and it does not cool off quickly. This helps your food stay warm while serving. Beware; iron tends to be heavy so these cooking vessels tend to be heavy as well.Cast iron is an effective material for cooking so why cover it with enamel? Iron tends to rust; iron oxide (rust) doesn't add any complimentary flavors to your food. If your cast iron cooking vessel was not enameled, you would have to season and maintain your cooking vessel. Adding the porcelain enamel not only looks good, but has multiple benefits. The enamel, being a solid coating, is also one of the most hygienic surfaces to cook on, does not stain, absorb odors, retain flavors, and is easy to clean. The enamel can be damaged, so limit cooking tools to plastic or wood when possible.The benefits of cooking with Le Creuset cast iron are many, but lets get down to the Pate Terrine specifically. With a flat bottom that curves up this pan resembles a narrow loaf pan. This pan is about 11 3/4 inches in long, 3 1/4 in wide and 2 1/2 in deep measured from the internal cavity. The pan, being made for making pate and terrines comes with a vented lid which fits snuggly in the pans recessed rim.This is yet another versatile pan in the Le Creuset line of products. Pates are not so popular these days and terrines seem even less so. However if you know how to make them, this is the pan to use. Pre-made pates and terrines are on the expensive side, making your own will eventually pay for this pan. Don't limit yourself to the original purpose of the pan though. I have used this pan to make lasagna for two, bread, cake, scalloped potatoes, and meatloaf. Since cast iron evenly distributes heat, it also evenly distributes cold to use this pan for making a Jello mold or your own jellied cranberry sauce.One feature that people tend to complain about is the cost. The cost does seem steep compared to other pans made from other materials. Heck, cast iron doesn't seem like it should be expensive when comparing to that old cast iron pan past generations have used for cornbread and camping. However the manufacturing process requires making a mould for each and every pan produced. They then go through the enameling process before shipping these heavy pans. If you take what goes into making and distributing these high quality cast iron products, the cost tends to make sense. But be honest, it's the cook's version of a toy. Do you need it, no. Do you want it, yes!!! Veal meatloaf for two, it will do it. Maybe want to broast a tenderloin, it will do that. Make those cute little loaves of bread for pinochle night, yep, got you covered. Sticky buns that look like they took hours, staying warm for,well, hours...Yep, does that too. So get it, use it and love it. Le Creuset rules!!!

5My kitchen workhorse

I got my first Le Creuset cookware in 1978. It was my college graduation week, & I was relaxing on the lawn reading the Sunday Boston Globe. I saw an ad for a Le Creuet starter set (French oven + 2 covered saucepans + skillet) for $..., so I decided to go for it since I was about to be out of the dorm living on my own. That purchase turned out to be one of my best investments ever, as I still use all the pieces today. I now have 3 French ovens, 5 covered saucepans, 3 skillets, 1 oval au gratin, 1 multi 2-in-1 pan with nonstick omelette cover, & 1 cheese fondue set, all in flame. These cast iron utensils are virtually indestructible, except for a few minor dings in the outer enamel. They cook very evenly, given the cast iron, making me a possibly better than average cook (they're one of my unfair advantages). My only problem with the cookware is the heavy weight, but that comes with the territory with cast iron utensils. I guess I'll have to get someone else to lift the pots when I'm old & decrepit. I know they'll outlive me!

The 4-1/2 qt French oven is the workhorse of my kitchen, so much so that I have two. I boil pasta in it & make big soups, gumbos, stews, casseroles, & you name it in it. I use it on top of the stove & in the oven. And then it goes to the table for serving, given its attractiveness.

Don't be put off by the high price of Le Creuset pots & pans. In the long run, they're a bargain because of their long life. I intend to pass mine down to my sons. Bon appetit!

5I use this one every day! It's awesome...

I admit it: I get a little carried away sometimes, but I truly love this pot! The 4 1/2 quart size is amazingly versatile. I use this size every day, so I actually own two of them. It's great for browning meat, making chili, stews, roasts, you name it. It's not quite big enough for a whole chicken, but then Le Creuset makes the large oval "French Ovens" for that. I always christen each new Le Creuset purchase with an authentic French recipe (hey, I told you I get carried away!)--this size is great for Boeuf Bourguignon. These pots cook foods perfectly every time, and are very energy-efficient in the process. Add in the 101-year Le Creuset warranty, and the seemingly high prices are fully justified. Clean-up is a snap as well, thanks to the super-hard and smooth porcelain enamel coating. It cleans almost as easily as Teflon, but is extremely durable (which Teflon isn't). And, on top of all that, the colors are breathtaking! I store all my Le Creuset on open shelves in the kitchen--they are too beautiful to be hidden in a cupboard.

If you only buy one Le Creuset piece, start with this one. Use it a few times, and I'm sure you'll want more! Happy cooking!

I have had a dream of owning this for years. I am constantly making stews/soups/roasting etc., I have another Le Creuset product (grill) which I bought from Amazon years ago. It has held up beautifully and without damage of any sort. They make nothing but quality products from a country you know doesn't use inferior products.

5A wonderful thing to have in your kitchen!

This 3.5 qt French Oven is such a great pot for things such as soups, stews, and larger batches of sauce. It heats evenly and you can usually get away with a lower heat level than called for in a recipe because the heat distribution is really effective. I've already made a number of tasty dishes in this pan, and I can't imagine what I did before I owned this. 3.5 quarts doesn't sound like a lot, but it's plenty of room for a couple or small family. I highly recommend this for cooks of all levels!

I bought this for my spouse who sometimes cooks solo meals. The pot is the perfect size for up to 4 servings of your favorite stew. Since it's a Le Creuset, it goes into the oven easily, cleans easily and is an all around great product. We don't use metal utensils in it which could scratch the enameled surface. The heat is evenly distributed when cooking, too. It's a great pot. The larger sizes are a little heavy to handle at times, especially when full of your favorite food. If $$ was no object, I'd have a full set of this brand's products.

This is indeed a large pot, but I have found it extremely useful and use it at least once a week. I didn't want a large number of pots and pans, so I looked for versatile pieces. We are just 2 in our household right now, but I bought this size mostly because it will be even more useful for the future - a family, company. I use it to cook many things that I start on the stovetop and finish in the oven. For example, to brown chicken pieces on the stovetop, add herbs, ingredients, etc, and bake it in the oven. The heavy tight fitting lid keeps the steam locked in and the food moist. I bake entire chickens in it when I am short on time (skin isn't very crispy, though)- it really cooks a whole 4-lb chicken in about half an hour at 450 degrees with the pot and oven preheated. Works great with chili, soups, beans, tomato-based sauces, even jams. The cast iron heats slow and holds heat in - I don't burn anything in this. Clean-up is so easy!

4This beast really cooks ....

This monstrous beast is the largest piece of cookware that we own. Once I manage to wrangle it out from the cupboard and heft it onto the stove, it's many uses range from cooking chickens, small turkeys, and roasts to making potato leek soup. The beautiful thing is that it really retains heat and cooks items thoroughly and evenly. The downside is that it can take a while to heat up, especially since it should heat up on a med-low setting so as not to burn items and/or damage the porcelain. Learned this the hard way by turning up my soup to med-hi in order to get it boiling more quickly (doh!). Now that we know how to properly use this type of cookware, we are enjoying it much more! Another clever use of this piece is to incorporate it into your weight lifting routine (did I mention this thing is very VERY heavy?). Now that we have tried the largest, we have begun collecting some of the smaller pots and really enjoying them.

This massive, weighty, cast iron, ovenproof pot is a serious cook's dream. Though expensive, like all Le Creuset cookware, it's high value is proven by the stove-top and oven performance.In the oven, internal heat distribution is perfectly uniform, eliminating sticking, beautifully cooking large roasts. On the stovetop, long, slow cooking is perfectly executed.Though there is no "positive" seal between the pot itself and its lid, the high level of fit and finish between the two pieces retains all liquids and moisture.Clean~up is a cinch..., just soak in warm soapy water and the surfaces wipe clean (you may however need to purchase a larger kitchen sink to accomodate this monster).The company offers a lifetime warranty on the enameled surface they apply to their high~grade cast iron; the quality of manufacture is so supurb I cannot imagine ever having to make use of it (I own inherited Le Creuset pieces over 40 years old with still~perfect enamel).If you are a serious home cook prepared to make a serious investment in a lifetime tool, buy this pot.

This is one of my very favorite pans! I don't usually write reviews of the products that I use. However, I think that Le Creuset products in general are great and that this pan in particular is useful. It is one of the only pans that I have ever found that will let me roast meat in the oven and then move directly onto the stovetop to make sauces and gravy from the drippings. It cooks very evenly and cleans up very well. I would highly recommend this product!

I use the large rectangular baker a lot. I often bake or roast large chickens, turkeys, or roasts in it, most often in a cooking bag with potatoes, onions, carrots, & celery, which makes a full meal & quick cleanup. It's also good for large quantities of Mexican food such as enchiladas or tamales. Lasagnas do well in it. It's just the thing for large Lutheran casseroles, too. It goes directly from the oven to the table or buffet for serving, given its attractiveness. It is heavy, heavy, heavy, as are all Le Creuset pieces; it is actually my heaviest piece, so you may need to buff up before getting it.

Don't be put off by the high price of Le Creuset pots & pans. In the long run, they're a bargain because of their long life. I intend to pass mine down to my sons. Bon appetit!

5Awesome deep dish pizza pan!

I purchased this piece as part of a set from Williams Sonoma. It was a great price, but when I unpacked this enormous baker I wondered what I was ever going to use it for. We are a family of two, and if I used it for something like lasagna we would be eating leftovers for a month. I found, however, that it makes the best deep dish pizza EVER! We haven't ordered delivery in at least two years, and I use the pan once a week. It's now one of my favorite le creuset items. A word of caution, though. I'm not very big, and the baker weighs at least ten pounds. I dropped it once when it was still wet and slipped out of my hands, and it cracked my kitchen floor tiles! Proceed with caution, but get ready for the best pizza you've ever had in your life!

5excellent piece of cookware

My favorite roasting pan! Yes, it's expensive, it's made to last a life time and then some.Performs beautifully every time and cleans up very easily with just a short soak in hot water. I use it for just about all my roasting needs. It makes the best sauces and gravies too, since the meat juices carmelize nicely on the bottom. And it goes easily from stovetop to oven and back to stovetop again.I also use it for making lasagna, roasted vegetables, tuna casserole, rice pudding and bread pudding. The even heating of the cast iron turns out a nice product every time. I even use it for a water bath for my ramikins of custard (preheat it first).I like the low profile, cast handles too. No problem storing this pan.One caution: Treat the finish carefully, do not use metal utensils against the enamel finish, since they can scratch and damage it. Do not use it in the broiler, which can also damage the finish. I put an old dish towel inside it when storing to protect the finish. Treated properly, this is a pan you will use for a life time and pass on to your grandkids.

5exceptional!

Fabulous roaster, and a must-have for any kitchen. There is nothing like LeCreuset's enameled cast iron for perfect roasting, brasing, casseroles. I roasted my Greek chicken recipe with potatoes and lemon in this, and it came out to perfection. Meat and vegetables nicely roasted/browned, sauce was rich, and chicken was very tender. Far better results than pyrex bakers or even a Calphalon roaster I have. And it makes such a nice presentation for serving and cleans up beyond compare.If you do much oven roasting, or cooking from-stovetop-to-oven, LC's enameled cast iron is by far the best option available. I used have to brown meat in a separate pan, and transfer to pyrex bakers for the oven -- not any more! The durability and even-heating of the LC cast iron is outstanding. I am thrilled with this piece!

4Has lots of options, and makes very good bread

The Panasonic SD-YD250 is pretty much the state of the art in bread machine technology in mid-2003. It's one of the larger units around with a 2.5 lb. loaf capacity. This size will also eat up your counter or cupboard space: you need just under 14" of width and height, and 10" of depth, so keep that in mind when you order.

The bread consistency is excellent. It's even pretty good in the "rapid" mode, though the results are a bit better in the standard bake mode so that's what I generally use. Also, the "rapid" mode for whole wheat or multigrain bread is 3 hours (vs. 5 hours standard), so it's not like you can start the machine at the beginning of a meal and expect completed bread before you leave the table. The fastest full cycle -- "rapid" bake mode for white bread -- is 1hr 55min.

The SD-YD250 is quieter than most earlier bread makers; however, you'll still hear the clicking and whirring as it mixes and kneads the dough. It's a neat idea to wake up to the smell of freshly-baked bread but the machine isn't quiet enough to run in the bedroom unless you're a VERY sound sleeper.

The options for this machine include the following:o basic/rapid bakeo immediate start/timer delayo white/whole wheat/multigraino sandwich (soft crust)o crust color light/medium/darko raisin (pause and beep to add fruit or nuts)o dough knead without bakeo bake without dough knead

Note that not all of these options can be combined. For instance: you only get crust color selection for white bread, and sandwich mode for white and whole wheat; multigrain bread always has a dark, tough crust (although the bread inside the crust is moist and well-textured).

The container inside really is nonstick (based on my not-so-lengthy use since I bought it) and the kneading blade does very little damage to the finished loaf. Ease of use and cleanup are both excellent.

Bread results are quite sensitive to variations in the ingredients in either weight, consistency, or age. Always use fresh BREAD flour and fresh yeast (bread machine yeast recommended) and the right amount of salt, sugar, and flour. The recipes in the included book specify flour weight in units like 16 3/4 oz., so it's HIGHLY RECOMMENDED that you get a digital kitchen scale for good results. Note that this will require still more counter space.

Summary: a very good machine, but you'll need a fair amount of counter space and attention to details to get the best results from it.

5Panasonic Rules

You get what you pay for in this world and the Panasonic SD-YD250 is a perfect example. Quiet as a mouse. No jumping around the counter and whining and improperly mixing as a Breadman we purchased (and returned) did. Had another Panasonic for 8 years. Decided to replace it when the pan seal failed and we checked out the cost of a replacemtnt pan (not realizing we could replace just the paddle mechanism/seal.) Thought we could get by on the cheap with the Breadman. Wrong. If you are looking for a rock solid, flexible unit that turns out a perfect loaf time after time (up to 2.5 lbs), this is your bread machine. The automatic yeast dispenser is a great feature, particulary if you use the timer. Spend the [money].

5No problem with the Oz and really outdoes the Philips

I purchased this machine as a replacement for a Philips bread machine I've had for a couple of years. It's the third bread machine I've purchased for myself, and had bought its predecessor (the SD-250) for my Parents some time ago. My Philips packed up (the bread tin broke away from its base), and they don't make spares, so I have to throw the whole machine in the bin - definitely won't buy another Philips anything. My parents have been most impressed with the Panasonic, and it's been personally recommended to me by other people, so after reading all the reviews on Amazon.com I decided to buy one.

So, to the point, I'm thoroughly impressed with this machine. It is solid and quiet. I took the first loaf I made with it and sliced it to find an absolutely even loaf (even from the 1:55 rapid mode). All the other machines I've had have had some level of streaking or unevenness in the bread.

As for all the other criticism of the recipe book for its use of weight rather than volume measurements for flour, it is a far more accurate way of measuring flour for any baking. Also the manual has since been updated (no doubt as a result of these criticisms), and now shows the approximate volume equivalents in all the recipes.
