5Great HUGE pan

This is a great roasting pan and is heavy and solid in the way all All Clad pans are. But it is huge. If you frequently roast 20 lb turkeys or half an ox, this pan is for you. A regular roasting chicken looks pretty small and forlorn. It is a terrifically well-made roaster, but I find I also need one just a bit smaller.

5Great Roasting pan

This is the biggest of the All clad roasting pans. It fits a 25/30 lb turkey no problem. The nice thing about having a regular interior vs non stick is that its easier to make gravey in this pan. (The recipe I use needs the flour to stick a brown a bit and be scraped off by my fork.) Also with a good soak everything came right off.

You can also roast two ducks in this pan. (It's big enough.)

If I had "some extra money" I'd be tempted to get the French roasting pan to get the lid, but that pan is slightly smaller. Or you might look into the deal which has a rack already in it and the set of oven mitts.

(Be sure to measure the inside of your oven before choosing one of these pans. Some ovens aren't big enough.)

2My pan has warped and is getting worse

At first we loved this pan. We've used it quite a bit, but recently it has started to warp and it gets worse when it is heated. I can no longer sear a roast and then put it in the oven because the pan is so uneven. I've contacted All Clad and am waiting to see what they say. Needless to say, I would have been much happier with a less expensive pan. I am very happy with all the other All Clad pans that we have, but this one is a disappointment.

I own this as well as a variety of other items like the All Clad Stainless Steel Sauce Pan, 2-qt, Sauce Pan, 1-qt, Reduction Sauce Pan with Lid and Book, 1.5-qt,Bonus Sauce & Omelette Pan Set, 2-pc, Sauce Pan, 3-qt,Omelette Pan, 14-in. All preform superbly which is why they are used on the top shows on FoodNetwork and PBS.Excellent quality, easy clean, and I am proud to have them hanging on my pot rack and sitting on my shelves along with all my Le Creuset, KitchenAid and Emile Henry cookware.Am a serious cook who cooks daily and loves French and California style foods. Have owned some of the Calphalon brand items but in my opinion they dont work for the serious cook.

4All Clad stainless petite roti pan

This is an excellent roti pan. I recommend it. However, you should know that it is solid stainless steel, not 3-ply stainless with an aluminum core. I mention this because it was difficult information to get -- I had to call All Clad directly to find out. I've since learned that many All Clad stainless pots and pans are advertised as 3-ply when they are actually solid stainless. Only the classic All Clad stainless line is 3-ply with an aluminum core.

5handy pan, get it while you can....

Great little saute pan. The MC2 line seems to be on the endangered species list with All Clad which is a shame because it's my favorite from this manufacture. The unsheathed aluminum core is thicker than the stainless models and I personally prefer the look. With more and more All Clad products coming from China these days it wouldn't surprise me if they're revising their lines and moving more production overseas.This little beauty comes from the US however and is a great size if you're cooking for two. It has more flat bottom space than a 10" skillet and is great for a number of tasks. I often use it to parboil vegetables prior to a saute as it's easy to change water and bring back to a boil without losing a beat. Additionally it's absolutely perfect for 2 small filets nestled together, finished with mushrooms, shallots and a reduction splash of red wine deglace. Pop the steaks back in and serve in the pan at the table... great meal, one pan to wash!

Used at the French Culinary Institute in NY. This sauce pan has marvellous heating attributes. It will perform perfectly using stovetop heating at lower levels than you are used to because of it ability to conduct heat and retain it.

This is a superb large steamer insert. It is great for large quantities of veggies or whatever you would like to steam. There is nothing like the flavor of freshly steamed veggies! It fits perfectly in the 6, 8, and 12 quart stock pots. I have only used it in the 6 and 8 quart stock pots myself. It is made very well and is excellent quality built to last. All Clad truly is lifetime cookware, I am sure you will not be disappointed. And it is backed by a lifetime warranty, what more can you ask for? Highly recommended! A+!

5love this, but a few considerations in pairing with a pan.

I have the 6 qt All Clad 11 inch diameter pot, and I ordered this to steam vegetables with it. The combo doesn't work well at all. I think it's because the steamer insert is so big and deep (which I wanted - I steam a lot of veggies) that there is barely any room between the surface of the steam water and the bottom of the steamer insert. If I keep the water really low so that the veggies will cook faster, then I'm constantly boiling off all the water and burning the pan. And if I fill it up more so it lasts the entire steam time, it makes the process take forever. The other night it took literally 30 minutes to steam some collard greens, and I'd had it. My other tiny pot with small steamer insert could steam this up in minutes, but I couldn't fit all the leaves in there and would end up doing them in batches, so either way was a hassle.I ended up going out to a retail store and bringing the steamer insert with me. The 8 qt All Clad pot looked much more promising, but I don't really do that much cooking besides steaming veggies and making rice and oatmeal, and it was a big investment in money. So I looked over at the 12 qt All Clad multi cooker set. I liked the idea of having two steamer inserts, this one that I already had and the one that comes with the multi cooker set, which is quite capacious itself. I thought how I could alternate the steamer baskets, as I steamed up my leafy greens in one, and then the second vegetable in the other in sequence (I make my food at night to take with me to work the next day). However, this steamer insert didn't fit in the 12 qt multi cooker pan! I guess because the multi cooker is a lower line of All Clad products than the high end 6 and 8 quart All Clad pans. I was so glad that I actually went to the store and found this out before ordering the set on line. I think it's a little misleading for the company to call this a universal steamer insert, and then make an 11 inch pan that won't fit it, but there it is. The high end 12 qt stockpot will probably fit just fine, but the store didn't have one in stock to check.In the end, I found another brand of stainless steel cookware, and their 12 qt multi cooker was a perfect fit with this All Clad steamer insert. And I've been in steaming heaven ever since! So the lesson is to make sure that you have a deep enough pan that will actually fit this steamer, and then it works wonderfully. I haven't tried the 8 qt, but I can vouch for the fact that the 6 quart does not steam well with this, even though another reviewer said that it did.

5It's a Steamer Insert - One Works Incredibly Well

As All-Clad will inform you, this steamer works with 6, 8 or 12 quart stockpots. I use it with my 8-quart copper-core stockpot. (It still looks more like a Dutch Oven to me). The fit between the pot and the steamer is perfect. Nothing wiggles, jiggles or does not stay in quite right unlike so many `universal' steamers on the market. Its large size allows you to steam six artichokes, while its uniformity of heat allows cooking asparagus for two. Clean up is a snap - throw it in the dishwasher or simply rinse it out by hand. The clearance between the steamer and the bottom of the pot allows for more than enough water to steam for well over an hour. The downside is that it is expensive, but isn't all All-Clad? The upside is that like the rest of the All-Clad line you will buy once and be done.

3Can not replace a traditional Chinese wok

I bought this pan four years ago and planed to use it as an everyday wok, mainly to make stir-fry dishes. After years of use, I finally have to admit that it is not a good replacement for a traditional Chinese wok. However, I still like it overall. It has even heat distribution, versatile, sturdy, easy to clean, well-made, and looks nice.

If you are looking for a stir-fry wok, don¡¦t get this pan and choose a traditional carbon steel wok instead. One major disadvantage of this Chef¡¦s Pan is that it cannot reach the high temperature required to make tasty Chinese stir-fry dishes. If you preheat it for 3-5 minutes, add some cooking oil and then food, the pan quickly cools down. You end up boiling the food instead of stir-frying it. The essence of Chinese stir-fry is to cook food at very high temperature in order to seal the juice in the food. Boiling removes the juice along with the flavor from the food. A traditional wok, made of either carbon steel or cast iron, can reach the high temperature required for stir-fry dishes.

A traditional carbon steel wok is very cheap and can last a life time if cared properly. The downside is that it can rust easily if not cared properly. (I prefer the type without the nonstick coating because the Teflon nonstick coating won¡¦t last long under high heat, and it will eventually disintegrate and get into the food.) You MUST season a traditional wok before using it the first time. Seasoning the wok builds a brown-black patina on the interior that makes it non-stick and also prevents rust. After cooking, wash the wok with hot water only (No detergent !), wipe dry with paper towel, and then heat it on stove to remove any moisture on the wok. Do not soak it in sink after cooking or you will regret. I don¡¦t use my carbon steel wok to boil food and never use it to steam, as they may damage the patina. Scouring the wok or washing it with detergent will also damage the patina. So avoid scouring or you will need to re-season it afterwards.

Overall, I like All-Clad¡¦s Stainless Steel line of cookware. I have several other pieces besides this 12¡¨ Chef¡¦s Pan. All of them are great and I won¡¦t trade them for other cookware. But I have a traditional Chinese wok just to make stir-fry dishes. If you are looking for a stir-fry wok, you can get a 14¡¨ carbon steel wok (no Teflon coating) from Target or Asian food store under $20.

5This is the pan to have...

I recently purchased this pan, and I couldn't be happier. It looks great, is easy to clean, and heats beautifully! Food browns well, and so far, doesn't stick. This is the pan I use most, for stir-fries, for braising, for sauteing, whatever. My old pans, a set of Calphalon hard-anodized non-stick pans, are going to be replaced, one by one...

The other great purchase I made was the All-Clad Non-stick grill pan--it is wonderful!

4Be careful of Amazon's misinformation

I recently received the "copper core" version of this pan as a gift and, though I have not used it much yet, I think it is necessary to mention that the Amazon product description is wrong--this pan is not a wok, or "wok-like" in anything more than a superficial sense (it has rounded sides). It is much shallower than a standard wok, and has a much larger flat portion on the bottom than a standard flat-bottom wok (it is more like a deep skillet with a lid than it is wok-like). Yes, one could stir-fry in it, but that means little (one could try to stir-fry in a skillet or sauce pan also). This makes the complaints of "Student" moot; this pan was never meant to replace a traditional wok (if it was, why would All-Clad also make a wok in the same series of pans?).Stir-frying will certainly be easier and better in an actual wok; I have one made by Calphalon and it is great. As far as this chef's pan goes, I plan to use it primarily for fricassees and braises.

5Most useful pan in my cupboard.

My wife and I came from different backgrounds. She swore by Calphalon before anyone else in our group ever started buying high end pans and I was almost exclusively stainless. As a result, our household now contains Calphalon, All-Clad, and a couple of stainless lined copper Mauviels.

I bought the braiser about five years ago. It handles frying, sauteing, and braising beautifully. I don't flip with a 13" pan so not having another pan handle in the way on the stove is a real convenience. The domed lid provides good circulation and the pan itself spreads the heat quite evenly.

The best part is that after turning out a great meal, this pan is a breeze to clean. (A trick I stole from Calphalon is, if need be, I can throw in some cleanser and let it soak. Nothing withstands that.)

My wife has now come around to preferring All-Clad as a result of this pan. As her pans lose the anodized coating, we're simply replacing them with All-Clad.

5This pan is great!

I recently ordered this pan, wondering if it would be worth the money. I have a smooth cooktop and my larger saute pans don't have flat bottoms which causes the pans to spin when I stir - very annoying. This problem is solved with this pan! It is very heavy duty so warping won't happen. It is wonderful to cook in and cleans up easily. The cooking surface at the base is about 10 inches, and at the top the pan is about 13". I chose this particular pan because I knew I would be able to cook a wide variety of meals in it. My smothered pork chops were awesome when cooked in this pan. I'm hooked!

For Christmas last year, my husband gave me my All Clad 13" brasier. I can't say enough good things about it. I reach for it constantly when I'm making a dish that requires some space. It serves a myraid of functions and looks great going from the oven/stovetop to the table.All Clad's not cheap, and if you're looking for a versatile piece, this one is it.

I bought this after reading a comparison of dutch ovens in "Cook's Illustrated." This one, along with I think LeCrueset, ranked highest (and this one was lighter-weight). I have not been disappointed. I use it for soups, stews, pot roast, etc. It conducts heat beautifully and even cleans up well. It's just a great tool.

Well it's not that old, but it is my go-to pot for soups, stews and braising large pieces. Stainless steel is the best because I can put it in the dishwasher. It heats well because of the All-Clad technology. High sides make it an excellent pot for frying. I've seen folks use cast iron Dutch ovens. I'm not willing to give up "dishwasher safe" for a pot that weighs a ton.

5I use this ALL the time

Don't let the price tag scare you - this pot will become one of the main tools in your kitchen. And you'll be hooked and you'll go back for more.A few years ago I went to a famous kitchen store to purchase Le Creuset, but they were out of the size I wanted and the saleslady suggested this All Clad dutch oven. She said, "I'm waiting for my own Le Creuset to wear out so I can get one of these."I took her advice, and I use this pot ALL THE TIME. At least once a week I use it to roast a whole chicken in the oven. I use it for spaghetti, casseroles, soup, jambalaya - anything. It works equally well in the oven or on the stove top. It's easy to clean - even oven-baked-on food comes off with a little soaking and a scrubber sponge.I don't have a lot of money but I considered this a lifetime investment that was worth every penny. I am so sick of the cheap and flimsy Chinese products that have saturated the market. It is SO refreshing to find cookware that is so well made, so versatile, and so good looking, too. I eventually purchased the 13" braiser which I also use all the time. It's a good complement to the dutch oven.If you're thinking of getting one of these, just do it!
