5Lives up to high expectations.

This is my 4th Global knife and after using them you come to expect razor sharpness and perfect balance. I used this to carve a 22 lb turkey in minutes. Absolutely no complaints. Personally, I'm a big fan of one piece steel knives compared to German knives with wood or polymer handles riveted in.

4Great knife with slippery handle, Beware on steeling it

Cuts like a Samurai blade quality, and doesn't need to steel as frequent as the Henckels/ Wusthof knives. It has excellent weight for a medium sized hand. However, the handles get quite slippery when wet, so keep your hands clean and dry while using this knife for safety. Also, if you plan on saving money on getting a cheaper steel, DON'T, because this Global blade is much harder than the Henckels/Wusthof blades; a qood quality Diamond coated or ceramic steel is a must, or if you really like the steel design, get the Global steel which can cost quite a bit. Overall, this is a good quality knife with proper care and attention needed, just like a Samurai would do to get use to his sword.

5An excellent knife

This light-weight and stunningly sharp knife is outstanding. As other reviewers of Global knives noted, the exceptionally acute angle of the edge makes them effective at cutting.

The size and balance of this knife are well suited to working with most vegetables, fruit etc. Cuts such as brunoise become much easier to accomplish using this knife.

As a first time user of a Global knife, it took me a few minutes to get used to how light it is. But once I got the feel of it, it became a real favorite.

Take the advice about care and sharpening this knife seriously. You can't just hone it on an average steel. Use the right stone and ceramic steel and you'll avoid ruining the edge.

5Who doesn't love this knife?

I work in a banquet kitchen that produces high class cuisine on a very large scale. When it comes to chef's knives, I work alongside every brand of knife imaginable. I see a lot of Shuns, Henkels, Ken Onions, Globals, and one guy even sports his James Beard limited edition chef's knife. But the funny thing is, when it comes to an alternate knife for more precise cuts where perfection is mandatory, this is the knife in everyone's kit. I always have to be careful where I lay my knife so that no one confuses it as theirs, but it just goes to show you how great of a knife this is. The shape of the knife allows you to line up the food for a perfectly straight cut that is made simple with the thin design and ultra sharp, low maintenance blade. It definitely shouldn't be the first knife for your collection as it's not the best choice for the variety of tasks commonly associated with a chef's knife, but it sure makes a remarkable addition to any set.

5A great all purpose blade, but consider the 8 inch chef too.

This was my first Global knife, and I've since bought four more. After three years of daily use it's still as sharp as ever, with only a few passes over a diamond steel occasionally. (If you are going to use Global knives, bite the bullet and get a diamond steel.)Global knives are frightenly sharp when they are new, even the serrated knives like the bread knife, which appear more benign. Be careful with these things until you get used to them, even if you've had good German knives before. (No, you won't cut your fingers,you'll be naturally cautious about that, you'll nick an arm or a wrist by brushing the blade, something I never even knew could happen until I got my 10 inch Global chef.)

The eight inch Oriental chef is a great little chopper and slicer, and the very wide blade is nice for lifting slices, but do think about the traditional 8 inch Global chef as your mainstay knife if you're only getting one. This one is balanced for a "push" stroke, rather than the pull stroke that most Western cooks use, the handle is a little high for a good rocker chop -- at least until you get used to it, and the back of the blade is curved, so if you're used to scraping your cutting board with the spine of your blade, this one won't do the trick. Your veggies will escape under the curve. The blade is hollow ground (beveled on both sides) not single sided like the denba, so you don't have to worry about being left or right handed.

None of this makes the knife a bad one, but it does take some getting used to and frankly, I'm more comfortable with the 8 inch chef as my mainstay knife. (The 10 inch chef is a bit of a monster for most tasks. Great for cutting a pizza all the way across in a single rock, but, well... I guess I shouldn't admit I use my good knives on pizza, huh?) You won't go wrong with a Global knife, it's just a question of which one feels right for you.

One more thing: these knives look like modern art, if that sort of thing matters to you. You can see the quality in them as well as feel it.

5Once you use Global, you'll never go back!

I bought this knife after having my Wustof rust through at the handle after 20 years of use. It was my previous favorite knife, and I was about to just purchase another one as a replacement. Then I was watching a cooking show, and saw this strange steel-handled knife, and I looked into it. After reading a few reviews, I decided that [the money] was a reasonable risk to take, and that if I didn't like the knife, I could just sell it and get another Wustof.

I took this knife out of the box, and pulled out a clove of garlic. With more ease than ever before (it was like the garlic wasn't even putting up resistence to this ultra-sharp blade), I immediately was making paper-this slices very quickly. The knife balanced so well, and the blade was so sharp, I was immediately hooked. The light weight of the knife really allows you finer control than I was ever able to get out of my heavier knives. My plan is to make all my knives Global from now on.

As for sharpening it, definitely do get a diamond steel or a whetstone. These knives hold their edges for a much longer time than my Wustof did (or Henkels that I have previously used), but they still do need to be sharpened occassionally. I simply use the diamond steel, and that's all I've needed so far. One other thing to look out for--the handles are built for small or medium sized hands. If your hands are huge, you will probably engulf the handle a bit. But for me, well...like the title of this review, I'll never go back.

5THE BEST

I've worked quite a few kitchens in my life most of them being Japanese restaraunts so I have a little bit of experience with knives and I must say... this Global knife is one of the best I've had the opportunity to use. I first heard about Global in the book "Kitchen Confidential" (Which is a great book, and if you have worked a kitchen or two in your life you will relate to a lot of the stories!). I checked this knife out at the local cutlery store and was immediately impressed. Although not as hefty as my regular 8" chef's, it's balance was amazing. The shaped handle made handling of this knife a true pleasure. The blade truly holds it's edge, and slices and chops like a dream. You will not be dissapointed with this knife, and I have no doubt it will become your knife of choice when working in the kitchen.

One note, although the company recommends using their diamond steel to sharpen due to how hard the steel in the knife is, I found that using my regular steel on occassion works just fine. I know I'm wearing my steel down a little quicker but it realigned the edge just fine.

5Almost perfect

This is one of the first global knives I bought. I loved it the first time I held it in my hands. What impressed me most was the perfect balance, the lightweight, and the sharpness. However, what may be perfect for me may not be perfect for you. I'd recommend anyone who is shopping for cutlery to go to a store and try how the knife feels in your hands before buying. And if you can borrow from a friend to try, that's even better.

Having used this knife for several years now, my initial impressions haven't changed. This is still my favorite knife for most tasks. I maintain it regularly with a steel and it is as sharp as it ever was. I have found though that for certain tasks like cutting slits into an onion for dicing or cutting root vegetables, I do prefer a heavier knife (that's why I bought another forged global knife), but that is just personal preference. All in all, a great general purpose kitchen knife.

5Great value - great knife

I have been a keen amateur chef for more than 30 years. I was given a full set of Sabatier chef's knives as a wedding present and have been using them since 1970. I had recently decided that 30+ years of sharpening had taken their toll on the Sabatiers and that new knives were called for - but what should I buy?

At heart I am a traditionalist and the appearance of the Global range had put me off them. Fortunately I recently read Anthony Bourdain's Kitchen Confidential and noted his ringing endorsement of the Global range. I decided to buy the 8-inch chef's knife to see how I got on with it. I have never looked back!

Despite its rather unconventional look, the knife has excellent ergonomic design. It is well balanced, readily gripped when wet and astoundingly sharp. TMOT, you are unlikely ever to meet a sharper knife. Hold a sheet of paper from the top with one hand out in front of you and then cut downwards with the other - this knife readily cuts the paper without it being tensioned. That is what we mean by a sharp knife.

As noted in the Amazon description, the knife's handle is fairly small. My hand is a medium male hand - about 3.25 inches or 8.5 cm across its back. The knife is an excellent fit for my hand - and could probably accommodate a hand upto 4 inches or 10 cm across the back. However, I have seen some chefs with meaty hands that might find this knife a less than perfect fit. The knife is fairly light - it weighs 5.5 ounces or 160 grammes.

In all I am well satisfied with this purchase and shall go on to replace all my Sabatiers with the Global equivalents. Oh yes - and if you haven't yet read Anthony Bourdain's Kitchen Confidential, buy that too - but be careful not to cut yourself when you start laughing thinking about some of the things he has to say about professional cooks...

5Best. Knife. Ever.

I've been a German knife snob for years. But this 8-inch chef's knife by Japan's Global is the finest blade I've ever owned. Period.Maybe it's not as easy to sharpen as a Wustof or a Henckel, but then again, it holds its edge ten times longer.I've spent ten years and hundreds (and hundreds and hundreds!) of dollars collecting German steel. Global is so good that it has me thinking of starting all over again.

5Excellent knife for specific uses

This Deba is a heavy duty knife ideal for hacking up a fish or chicken. It has enough weight to cut through the bones easily. This is not a general purpose knife. It is ground only on one side of the blade, so it tends to cut at an angle on soft items, like tomatoes. Well made, wooden handle, should last a lifetime with proper use.

5The ultimate wedding gift

My Global has been slicing bread for three years now and guests still comment that it's "a really sharp knife". A low-carb disbeliever, and living near Seattle bakeries that are serious about their product, I eat lots of bread. Much mileage on the knife and it still melts through hard-crust Toscano Loaves like they were Wonderbread. Two more of these knives have been purchased for wedding gifts. Followup shows that the newlywed recipients didn't know that there were special knives just for cutting bread and are using this wonderful knife for cutting up everything. And love it.

5It Slices, it Dices

Global knives are really awesome. This knife is amazingly sharp. Due to my own carelessness, I have actually cut my finger twice with this knife. I can assure you it goes through bread and finger with ease.More seriously, because it is one peice, it is easy to clean and looks awesome. The feel is great in my hand and the knife is balanced.

5The perfect knife for the job.

A chef's knife is great for many of the daily tasks required in a kitchen. But if you're de-boning meat or fish, then it just won't do. The boning knife fills in as a perfect replacement for this type of job. I've used my Global boning knife for filleting every kind of fish imaginable as well as boning out pork, beef, venison, and poultry. I wouldn't dream of touching another knife for these jobs. The blade has the perfect amount of flex to get in and around joints and curved bones that would be otherwise impossible without this knife. And it still sports the ultra sharp, low maintenance blade and devilishly good looks that is expected from any Global knife. If you fabricate a lot of your own meat, then I have no idea why you don't already have this knife.

If you like global knives and already have a Chef's knife and a bread knife and want to get something usefull get this. I have used this knife to fillet fish and bone meat. The flex in the knife is great and the knife stays sharp for a long time
