2Problem with Copper-Core stockpot Cover

I received this stockpot for christmas - Given the price tag of this item ($450) one would expect this to be perfect craftsmanship. Not so, the cover didn't fit quite right. It snugged down into the pan and wobbled, unlike the Copper-Core sauce pan I already owned where the cover sits on top. I called Williams-Sonoma, the place of purchase. They had no idea what I was talking about but said they would gladly refund. So the pan was returned and I ordered another from Chefs Catalog hoping I just got a bad pan. Same problem - I then called All-Clad directly. Customer service had no idea what I was talking about, they were under the impression the cover was the same as their sauce pans. They promised to check this out and get back to me. They never did. I sent an email to customer service, but never got a reply. I called Chefs catalog, they said they would investigate this, but it would take a week. I never heard from them again. I called All-Clad again - and was told to trace the cover and the pot to see if it was out of round... I did this but it was very difficult to tell given that the tolerance for out of round would be so slight. I called All-Clad again, explained my frustration and they told me they would check into this. They did call me back the same day this time, and told me the wobbling of the pan cover was normal. So I lived with this...After a couple of months I called All-Clad again, it just didn't make sense to me that the cover should fit this way. Customer service told me that there was a bad batch of pans that were out of round. They told me to send it back. They also told me to put the mailing receipt in the box and they would reimburse for shipping. I received a new pan yesterday. The cover fits perfectly - it's exactly the same as the sauce pan. I did not get reimbursed for the shipping -Overall this is a great pan - but the lack of customer support is appalling, both from the sellers of this product and the manufacturer. You would think that when buying top of the line products you would get better service - I doubt I'll buy another All-Clad product - There's too many other good quality products out there -

5My favorite stock pot

This is my favorite stockpot.

The copper makes it the most even heating stock pot I have ever used. It holds heat well, so it doesn't loose heat as fast as an aluminum or aluminum core pot does -- which can have trouble when frying because the aluminum cools quickly.

It works great for deep frying, oven roasting, making all types of soups, stews, stocks, etc.

It is pricey, but really does work better for me than the less expensive aluminum core models.

5A Real Step Up From Calpalon

This pot was purchased as a replacement for a 25-year-old Calphalon classic anodized aluminum stock pot of the same size that had always performed satisfactorily (it had just gotten ratty-looking and, frankly, I wanted to treat myself). I cook a lot of soups, stews, and one pot meals and so I use a pot of this size regularly. I am thoroughly impressed at its superior performance characteristics. It heats very evenly and I can saute vegetables much longer before I have a problem with them burning. The pot is easy to clean and I have been putting it in the dishwasher will no ill effect. The only down side to this pot is the price, but I expect it to last for at least the 25 years that my Calphalon pot did, so it will pay for itself over time.

Ever since receiving one as a gift, this piece has been the pride and joy of my cookware collection. Having a thick interior layer of copper, the pot is quite heavy, and conducts heat more evenly than the calphalon pan I used to use. The extra money for the copper core is definitely worth it. If I had the money, I'd stock my entire kitchen with this line.

I never worry about things sticking to the bottom of the pot. The trick is to heat the pan on low to medium-low heat for a few minutes before putting oil in the pot, and then letting the oil heat for a few minutes until it begins to smoke.

Stainless steel is much easier to clean than either hard-anodized aluminum or copper. Getting it clean enough to use is a breeze, although personally, I insist on scrouring it until it shines like new simply because I like this pot so much.

Oh, and if you regularly cook for more than 1-2 people, you'll need a bigger version of this pot. I rarely do, and even so, I find this pot to be a little bit on the small side.

5The best you can buy (at a steep price)

I think I'm a little crazy for buying this. I just had to find out if the copper-core was really better than an aluminum one. It is, but not by that much. You can buy a pan from Cuisinart's Multiclad series that will do the same thing almost as well for a much cheaper price.That being said, this thing is very well designed. The rolled-lip is useful for pouring. The radius of curvature where the bottom meets the sides is large enough to allow for utensils to easily get in there (a problem with most pans). The handle stays cool and is well designed. Overall, this is the best 2-quart saute pan money can buy. Is it worth it? That's up to you.

5Great saute pan

I own the 3 quart version of this pan, which measures almost 11" across and has plenty of room for meals for 2-4 people. I also own the 10" Copper Core frying pan, which gets more use than this pan because it's lighter, browns a little better, and the sloping sides make the food easier to handle in the pan. This saute pan does an admirable job of browning, though, and the high sides are essential for foods that will finish their cooking in liquid. If you can only afford one pan from the Copper Core line, I'd suggest this one over the frying pan, because it's more versatile. I've found that the space available in the 3-quart saute is roughly equivalent to an All-Clad 12" frying pan, plus it comes with a lid, making this a great option for those just starting out with Copper Core.

5A great every day sauce pan that doesn't dribble when you pour

My first All Clad pieces included a All-Clad LTD 12-Inch Fry Pan and a 1 ½ quart sauce pan both in the LTD. The Copper Core line was not yet available. If I had to do it over again, I would have gone with the 1 ½ quart sauce pan in Copper Core (well, I actually purchased one when it became available. Why? For three reasons.The Copper Core sauce pan heats up faster (only slightly faster on an electric range but considerably faster on a gas range) than my original LTD or Stainless versions. So while cooking faster is easy in this pan, turn down your fire especially if you cook with gas like I do. Otherwise you'll boil this pan dry (so far so good that I have not yet done it with this pan).But what I really like is the rolled lip. Pouring without dribbling hot liquids down the side of the pan is very nice and neat. It's too bad All Clad does not have rolled lips on their entire saucepan line.I can cook anything in it. That includes acidic tomato based spaghetti sauces.I have many All Clad pieces. If I had to do it over again, I would only buy from the Copper Core line with the possible exception of some of the larger sauté pans (4 quart and larger) and stock pots (larger than 8 quarts). Those Copper Core pieces are much heavier than the comparable Stainless versions. All the All Clad sauté pans and stock pots (except the 7 quart stock pot) have rolled lips because of the pasta pentola insert.My suggestion: if price is an issue but you want a quality piece, go for the All-Clad Stainless 1-1/2-Quart Saucepan or the dishwasher safe All Clad LTD2 1.5-Quart Sauce Pan version if you can live with dribbling when pouring (the LTD2 uses the same handles as the Copper Core). If you can afford it, go for the Copper Core version.PROS:Flared lip helps prevent dribbling hot liquids down the sides of the saucepan.The handle design helps keep your hands comfortably cool to the touch and the wider and longer handle makes it more comfortable to hold.It's a quality product that is made in the USA.CONS:You pay for the expensive copper.Its heavier although should not be too heavy for every day use.You really have to stay close to the kitchen as the Copper Core pan will boil dry faster than a regular pan.

5Amazing cookware, Never Knew It Could Be This GOOD!

Over the years I have used a variety of cookware--aluminum bottomed stainless Revere Ware, Magnalite Professional, Calphalon, Calphalon Professional NonStick. When I finally had to throw out the last of my tattered collection, I started to look for some stainless cookware that would stand the test of time and offer performance to boot. I decided to splurge on this All-Clad Copper Core.One of the pieces I recieved was this 4-Quart saucepan. I love to use this to cook pasta for two, and it's the perfet size for making stock with one chicken carcass or a risotto for several. Love this pot!Delighted to report that I am THRILLED with this expensive splurge! All-Clad is NOT about expensive hype and status, those these pans are beautifully made, instead they do everything cookware should, and have literally changed the way I cook. Having attended CIA and worked as a professional chef for a few years, I know the golden rule for food not sticking: preheat pan, add oil, let oil heat for 5-10 seconds, then add food. Using these guidelines with the Copper Core, nothing sticks! And I mean for some things, like omelets or fried eggs in the 10" frypan, the performance is as good as my brand new Calphalon NonStick was; when you can just slide omelets and fried eggs out of the pan without ANY sticking at all, why would you ever need Nonstick or Teflon based products?!However, these pans are also superbly capable of developing a fond on the pan bottom for deglazing and subsequent sauces; in fact I have had them give every last bit of the fond up when deglazed, almost cleaning the pan for me! That's the best thing about them--they do everything right. I am not sure if it's All-Clad propriety stainless "recipe" or what, but these pans are so amazing to be able to function on all levels from eggs sliding out with ZILCH sticking to chicken breasts sticking just enough to develop rich fond for complete deglazing, to the light and glazy fond from sauteed onions and garlic for developing a richer risotto when deglazed with wine.Mind you, this is partly about knowing some basic cooking principles, and these pans might not act so obligingly in non experienced hands, because when I read about people commenting on how everything sticks in their All-Clad stainless interior, I know it isn't All-Clad's fault, believe me!I have found the copper core very responsive and quick to adjust to temperature. Perhaps not as great as true copper pot and pans, but noticeably better than aluminum cores (Stainless line) or anodized aluminum (Magnalite Pro/Calphalon). These pans heat up and boil water faster than anything I have ever used, aside from true copper cookware, and when turning the heat down, or removing from burner, they also cool incredibly quickly. It's nice to have semi-copper performance with the ease of stainless steel clean-up. And this cookware does clean-up quickly and easily, particularly when using Barkeepers Friend. I use plastic and wooden utensils (no metal) and they still look almost brand new after several months.The copper band however does tarnish and discolor just as much and just as fast as a true copper pot or pan, so if you are fanatic, you will need to polish the tarnish away fairly often (at least every other week). However this is barely noticeable for us real world users, and Barkeepers friend does a good job of semi-polishing the copper (but it won't gleam).I know, I know, they are SO expensive. But honestly, if you know how to cook or want to learn with responsive cookware, I honestly feel this is a great investment. I am wholeheartedly thrilled that I made it and cannot recommend highly enough.

5One of My Kitchen Favorites

Next to my All-Clad Copper Core Dutch Oven, this is my favorite cooking utensil. I also have the 12 inch fry pan I use when company comes over. After using this pan a few times I threw out all my nonstick cookware. Now I use nothing but All-Clad Copper Core. Every morning I scramble eggs in this pan. I put a pat of butter in the bottom, turn the heat to medium (never high or you'll scorch any pan), let the butter start to turn brown and throw in my eggs. They don't stick; it's amazing. The few times I do have some stickies, I just soak in water for 10 minutes before washing and they easily come clean. About once a month I might soak the pan with a 1/2 inch of vinegar for an hour or overnight. It turns the bottom shiny and new looking. This pan is also great for bacon, saueting pork chops and chicken--just about anything. And, I never have to worry about toxins migrating from nonstick cookware into my food.

5Simply the Best

You cannot beat All-Clad in the quality department. After using this pan for a week my family even noticed how my cooking was tastier. This pan does a fantastic job caramelizing meat and veggies. It heats very quickly and evenly. But it also cools very rapidly because the copper is a fantastic conductor of heat and cold. I like the copper core better because of the ease of maintenance. Just a little Barkeeper's Friend and it shines like new. The handle stays cool enough in most applications for me to use it bare handed. The sides are sloped just right to impress your friends with a little food flipping action. I've used it on both electric and gas stoves and was happy with the even heating of both. If you can swing the price you won't regret it.

5Never have to eat Teflon chips again!! :)

Amazing is the only word I can think of for this cookware.I am sick of buying nonstick cookware and having all the teflon chip off into my food after the first year. I thought that I would have to sacrafice a non stick surface for a safe solution to not eating teflon but that turned out to not be the case.This stainless is more nonstick than any teflon I have ever used!The box says "stainless surface does not react to food." I thought "what kind of nonsense is that?" But it's so true that it is scary! Even when my food burns it still slides around on the top. A litte butter on the bottom with a low flame and my eggs were practically sliding out of the frying pan with one nudge of the handle. Chicken slides around like ice cubes on a hot surface.I don't know how it does it but this set is better than any cookware I have ever used!I thought I was crazy for spending $400 on a cookware set but I should have spent the money no this years ago. I probably have wasted more than that amount of money from just replacing cheap teflon sets. Buy this set! You wont be sorry!

5Amazing cookware, Never Knew It Could Be This GOOD!

Over the years I have used a variety of cookware--aluminum bottomed stainless Revere Ware, Magnalite Professional, Calphalon, Calphalon Professional NonStick. When I finally had to throw out the last of my tattered collection, I started to look for some stainless cookware that would stand the test of time and offer performance to boot. I decided to splurge on this All-Clad Copper Core.One of the pieces I recieved was this 1 1/2 Quart saucepan. What a workhorse this one is! Rice to soup to lentils to barely to country gravy, it gets used! The most used of all my Copper Core is this little pot!Delighted to report that I am THRILLED with this expensive splurge! All-Clad is NOT about expensive hype and status, those these pans are beautifully made, instead they do everything cookware should, and have literally changed the way I cook. Having attended CIA and worked as a professional chef for a few years, I know the golden rule for food not sticking: preheat pan, add oil, let oil heat for 5-10 seconds, then add food. Using these guidelines with the Copper Core, nothing sticks! And I mean for some things, like omelets or fried eggs in the 10" frypan, the performance is as good as my brand new Calphalon NonStick was; when you can just slide omelets and fried eggs out of the pan without ANY sticking at all, why would you ever need Nonstick or Teflon based products?!However, these pans are also superbly capable of developing a fond on the pan bottom for deglazing and subsequent sauces; in fact I have had them give every last bit of the fond up when deglazed, almost cleaning the pan for me! That's the best thing about them--they do everything right. I am not sure if it's All-Clad propriety stainless "recipe" or what, but these pans are so amazing to be able to function on all levels from eggs sliding out with ZILCH sticking to chicken [...] sticking just enough to develop rich fond for complete deglazing, to the light and glazy fond from sauteed onions and garlic for developing a richer risotto when deglazed with wine.Mind you, this is partly about knowing some basic cooking principles, and these pans might not act so obligingly in non experienced hands, because when I read about people commenting on how everything sticks in their All-Clad stainless interior, I know it isn't All-Clad's fault, believe me!I have found the copper core very responsive and quick to adjust to temperature. Perhaps not as great as true copper pot and pans, but noticeably better than aluminum cores (Stainless line) or anodized aluminum (Magnalite Pro/Calphalon). These pans heat up and boil water faster than anything I have ever used, aside from true copper cookware, and when turning the heat down, or removing from burner, they also cool incredibly quickly. It's nice to have semi-copper performance with the ease of stainless steel clean-up. And this cookware does clean-up quickly and easily, particularly when using Barkeepers Friend. I use plastic and wooden utensils (no metal) and they still look almost brand new after several months.The copper band however does tarnish and discolor just as much and just as fast as a true copper pot or pan, so if you are fanatic, you will need to polish the tarnish away fairly often (at least every other week). However this is barely noticeable for us real world users, and Barkeepers friend does a good job of semi-polishing the copper (but it won't gleam).I know, I know, they are SO expensive. But honestly, if you know how to cook or want to learn with responsive cookware, I honestly feel this is a great investment. I am wholeheartedly thrilled that I made it and cannot recommend highly enough.

5Finnally rolled the lip of the sauce pans

I love All clad pans, but most don't have a rolled lip, and these do. While I'm not sure that this layer of copper is worth the extra money, having a rolled lip on the sauce pan means it doesn't drip when you pour from it. They should do this to the whole line of pans.

The exposed copper looks like more of a marketing thing than functional. How else can you show that there is copper, which serious cooks all "know" is best, without it?

Other than that buy good pans when you are young, they'll last a lifetime.

5Always and forever

A professional chef who is a neighbor recommended these to me when we had our kitchen remodeled and I wanted to splurge on some new cookware. "Buy these, and you'll never need anything else,' he said. Lord, he was SO right. Lids that fit, handles that magically stay cool, surfaces that are easy to clean, even and quick heating...who could ask for more?Don't bother with any other brands.

5Two things make a kitchen...good knives and good pots/pans

For a good even heat, excellent quality of workmanship, and a dependable name, I can't think of anything better than All-Clad. For years, I used cheap cookware store non-stick skillets and hand-me-down pots and pans my mother used when she first got married. What a difference it makes.

Most cookware is way too thin, which leaves you with hotspots. For years, I would make up for this by using a cast iron "defuser" to even out the heat and keep the direct flame off the bottom of the pan. I don't have to do this any more. With the triple-layering, you get even heating, regardless of whether it's the middle of the pan or the outer edge.

Personally, I like the stainless. MC2 wasn't around when I bought mine, and I might have chosen that because of the low-maintanace exterior, but I'm not regretting it either. I don't have to be worrying about scratching through the coating with it and it cleans up easy enough with a little water and even less elbow grease.

Cooking will always be a chore, even if you enjoy the act in itself, if you never invest in good cookware and good knives. This is the first step on at least one of those. You might also wish to add a double-boiler, the steamer insert and a 1 qt. saucier; and maybe a larger stock pot (12 qt. if you can afford it), but this really lets you hit the ground running.

3a few things to consider

i've been using this set for over three years now, and have been very happy with it.durability: no issues with handles coming loose, etc. almost all of the pans have remained even completely ding/dent free. my only complaint is that the bottom of one pan has domed slightly, so the pan does not lay completely flat on the burner, and heat distribution is affected. so while overall durability has been good, i'm knocking them down a point for this flaw.cooking: these pans perform well. with the exception of the one mentioned above, all conduct heat evenly. no problem getting good crystalization of fats from meats, or browning vegetables in the oven. i think you definitely need a wider array of pans in your kitchen - a nonstick and a cast iron are two i can think of right off the bat - as well as some different types of metals for different applications. but this isn't something that you can hold against this product. just understand that this set won't cover ALL your pan needs.cleaning: i've seen a lot of reviewers talk about how hard it is to clean these pans. it should be noted that pans are harder to clean, and stick more, if they're used less frequently. i think some of the issues people are having is because they're not using the pans frequently enough, or are not cooking foods at the proper temperatures. i've had no problems cleaning these pans.pricing: aside from my issue with durability mentioned above, the is the only other area i feel detracts from this product. if the price is no object, or you can appreciate the cooking qualities of the pans and need something that looks good, i can see spending the money on this set. and i certianly wouldn't refuse it as a gift! however if you're on the fence about the price, and it's a financial stretch for you, i think you could put together a set of pans that will work just as well for much, much less. professional restaurant supply stores will sell pans that will work just as well as these for much less. they just won't be as pretty. so understand that you don't HAVE to spend this kind of money to get the same results.so overall i'm happy with these pans. i'm disappointed one has warped slightly - i should see if it's eligible for a replacement - but aside from that they're great.

4Beautiful cookware

I bought this set back in January and must admit, it's gotten a lot of compliments from friends and neighbors. As with anything stainless steel, which is apparently all the rage these days, the look and feel (heavy!) of this cookware is impressive.

The most impressive thing I've noticed so far is the even temperature control throughout all of the pieces I purchased and have used so far. Even when boiling water, you can see at the bottom of the pot that the heat is being distributed evenly, which is a major downfall of most other cookware.

The first downside is that they are, in my experience, a PAIN to clean. Following the manufacturers recommendation to NOT put them in the dishwasher, I have washed them by hand after every use. I highly recommend washing them IMMEDIATELY after use to avoid having to spend a lot of time getting them clean.

The other downside is that I think these pots and pans will work much better on gas cooktops than on radiant cooktops. Fortunately, I'll have gas cooktops again in a few months, but really feel that buyers with radiant cooktops should test out a piece or two before commiting to the whole set.

Other than those two minor downsides, this is a "keep-for-life" set of pots and pans, and well worth the investment. Check out the rest of the All Clad stainless series for other great pieces (highly recommend the omelette pan to complete this set in particular).
