5You need to make a decision

As a previous reviewer noted, precut meats are readily available (and most of us use them most of the time). On the other hand, I for one am not going to pay a dollar or more a pound premium to buy a chicken that's already cut up when I can do it myself perfectly well, thank you. If you are the type that will take the extra few minutes after shopping to cut up large-quantity meat and freeze it for future use, a cleaver can save you some real money over the long run.

Having said that, this cleaver is about as good as it gets. Well-balanced, very sharp. and able to easily cut through bone, this is as good as it gets for the home kitchen. I recently upgraded from a Henckel International, and the difference is profound. While the Henckel is perfectly fine for light duty and playing "Yan Can Cook", the Wusthof is the one you want for serious business.

5Important piece of cutlery set!

The Classic 6 inch cleaver belongs in any serious set of home or professional cutlery. It has numerous uses from overkill smashing of garlic cloves, use as a scraper to pick up prepared food and place in bowls, mixer or pan. It can quarter poultry, separate beef or pork ribs with ease. If you buy large cuts of meat, you can cut into smaller portions for extra savings.The Wusthof 6 inch Cleaver is a high performance, high quality kitchen tool. The handle (as in the whole Classic line) is comfortable. The finish on all Wusthof knives and instruments is excellent and will provide long years of use and easy cleaning.A good purchase that I'm happy with!John Row

4Good Cleaver, But Will You Use It?

There are really two main competitors in the high-end mainstream kitchen knife market: Henckels and Wusthof. Those who have used both usually have a preference. My preference (and therefore bias you should know about) is for the Wusthofs.

The Wusthof Classic line is the more conservative counterpart to the Grand Prix line. The only difference, however, is the handle style. I personally prefer the Grand Prix, but this is an issue of personal preference. The balance and grip of these knives are as close to perfect as I have found. For those wondering what benefits a higher priced knife provides, one benefit is that the blade (or tang) is one piece all the way through the handle. This makes the blade much stronger, and less likely to snap.

This particular model, the 6 inch cleaver, is a good cleaver. Most people really don't use a cleaver anymore, as they buy either pre-cut/pre-packaged meats, or they have the butcher cut the meat into loins or steaks for them. If you really are going to use a cleaver, this one is my favorite. The weight and balance are very good.

These knives are great I have been using them for close to 2 years now, daily they go in the dishwasher and are still like new. These are well worth the price by now I would have purchased at least 4 sets of less expensive knives.

5Great knives, fast delivery

We bought four Wusthoff steak knives 34 years ago on our honeymoon in Germany, and they are still in great shape and used several times a month. We decided to buy four more for dinner parties. The new knives are great. Slightly different from our vintage knives, but still very high quality. They arrived in just a few days after I ordered them; much faster than I expected. I give a high rating to both the product and the vendor.

4Good Starter Set, Look Carefully at Knife Selections

There are really two main competitors in the high-end mainstream kitchen knife market: Henckels and Wusthof. Those who have used both usually have a preference. My preference (and therefore bias you should know about) is for the Wusthofs.

The Wusthof Classic line is the more conservative counterpart to the Grand Prix line. The only difference, however, is the handle style. I personally prefer the Grand Prix, but this is an issue of personal preference. The balance and grip of these knives are as close to perfect as I have found. For those wondering what benefits a higher priced knife provides, one benefit is that the blade (or tang) is one piece all the way through the handle. This makes the blade much stronger, and less likely to snap.

This set includes an 8 inch chef's knife, a 3 ½ inch paring knife and a 6 inch sandwich knife.

The 8 inch chef's knife, is a great knife. Wusthof offers four sizes of chef's knives in the Classic line, 5, 6, 8 and 10 inch. For most home cooks, I think the 8 inch knife is the best choice. The 5 and 6 inch are a bit small for bigger jobs, but the 10 inch is too big for most jobs. While the 8 inch isn't perfect for all uses, if you are only buying one size chef's knife (and most people only buy one), this is the one I would recommend.

As for the 3 ½ inch paring knife, this knife falls into the category of overkill for me. Most cooks will get by just fine with the 4 ½ inch utility knife. There is really no notable difference in size for the vast majority of applications between the 3 ½ inch paring knife and the 4 ½ inch utility knife. I prefer the 4 ½ inch utility knife, but the 3 ½ inch paring knife will do the trick.

I have found very few uses for the 6 inch sandwich knife. I prefer the larger size of the chef's knife or the smaller 4 ½ inch utility knife. This knife is just the wrong width and length for most tasks.

This set is a good deal; however, if compiling a set myself, I would include the chef's knife, the 4 ½ inch utility knife, and the 9 inch bread knife. Judge for yourself.

5The right three knives for the new cook

Wusthof makes the best knife blades in the business, and in my opinion the best quality knives. Cheaper knives generally dull more quickly, and some never get truly sharp at all. Wusthof knives, in contrast, get clean, exact cuts every time, and are a joy to use.The "Wusthof Classic" style of this set, with the three rivets attaching the black composite handle pieces to the full length tang of the blade, used to be the only style of handle Wusthof made. Wusthof now makes several other styles, including the slightly less expensive "Grand Prix" line with a molded handle, and the much more expensive "Culinar" line with stainless steel handles. If you have money to burn, you might want to look at the Culinar line, but for most people, the Wusthof Classic knives are likely the best tradeoff between money and quality.The three knives in this set are the ideal knives for a brand new cook with no existing kitchen equipment. The chef's knife and the paring knife are needed in any well equipped kitchen; the "sandwich knife" is a compromise that can substitute, albeit imperfectly, for any of three or four other special purpose knives.Amazon currently lists the Wusthof classic chef's knife in six different sizes; the 8" blade size is one of the sizes I own, and it works well for almost any cutting task in the kitchen. There are times when it feels like a larger size might work even better, such as when dealing with a large roast or turkey, but the 8" always seems to be sufficient in the end; there really aren't any times when I want a smaller chef's knife for general purpose use.Paring - for example, peeling potatoes - is more of a special purpose task, for which a specialized knife is really superior. The 3.5" blade length in this set may seem short, but it's short for a reason. Often while one is using the paring knife in one hand, one is holding the object being cut in the other. The short blade length makes it easier to avoid stabbing oneself while maneuvering both the knife and the object.The 6" knife is a little different. Unlike the other two knives in this set, the 6" knife is really only perfect for a very limited set of tasks. Its strength is that it can substitute, if a bit imperfectly, for a variety of other knives that may be missing from the kitchen of a brand new cook. For example, it can be used for utility tasks that require more than the 3.5" blade length of the paring knife - which is to say, most utility tasks - if the cook doesn't already have a 4" or 4.5" utility knife. It can also be used, in a pinch, when what the cook really wants is a second chef's knife - for example, to cut fresh vegetables for a salad when it wouldn't be hygienic to reuse the big chef's knife that was just used on raw meat. The 6" knife won't be perfect for these tasks, but it will work, and will be much better than no knife at all.As the new cook collects more knives, the 6" knife will likely be used less and less. It won't ever become completely unused - I just used mine this evening, despite having half a dozen other Wusthof knives to choose from, because the 6" length is perfect for slicing a tenderloin roast - but eventually it will become one of the lesser used pieces in the set.That may make the 6" knife less than cost effective for a cook that already has an established set of kitchen tools. For such a cook, one of the other sets might be better - perhaps the two piece "starter" set with the chef's knife and the paring knife, along with perhaps a Wusthof sharpening steel. For a brand new cook with no kitchen equipment, though, this three piece set is close to perfect, and it is the set I started my Wusthof collection with, 20 years ago.

5wow, what can I say

I loved these knives right out of the box. They came sharp and feel great. I was finally moving out of the parent's house and needed some knives. With the free block and steel from Amazon you can't go wrong. I looked at all the sets for weeks and in the end decided that I would rather just buy what I needed, instead of settling for what came in the sets. I have found that I am rarely happy with prepackaged sets of anything. Therefore, this was a good starting point to which I added a bread knife and plan to add pieces if I need them (I doubt I will, but I may just fill the block :). I bought these sight unseen from Amazon and could not be happier.Update! June 2011 and still going strong! Daily use, occasional sharpening, wow.

5Buyer's remorse revisited

In June of 2003, I wrote a blurb praising this starter set. My opinion from then hasn't changed, except the last part where I wrote that I couldn't justify Wusthof's price for those knive you don't use every day. Well, I lied. Since then I have replaced virtually every knife I had then with a Wusthof. Whether I was dicing veggies, carving a roast, or simply cutting up a chicken, I just got to the point where I could no longer tolerate using an inferior knife for the job; so I upgraded as I went along. All my old knives went into my camping box (you're supposed to be "roughing it" when camping, right?).

The knives in this set are superb. The problem is that after using them, you are liable to do as I did and spend lots of money later. Be warned.

5Perfect for new cooks...

I received as a gift a set of three Wusthof knives when I moved into my first apartment. At that point in my life, I knew NOTHING about cooking, and could barely boil water. The knives sat in their box for several months before I finally got around to opening them. These knives, however, are absolutely amazing. The difference between my Wusthof knives and a "regular" knife is really impressive. I have been using them for over three years now on a daily basis, and have not yet needed to sharpen them. They easily cut through tough, sinewy cuts of meat, while still being sharp enough to tackle delicate fruits and vegetables without ripping at them. I have since, for the sake of experimentation, tried other "quality brand" knives including Henckel, but nothing has come close. I am now working on completeing my set of Wusthof.

The Wusthof 4 ½ inch utility knife is a great all-around knife. This is the knife I use for the majority of my small chopping work (when I don't use a Chef's knife).

The 2 ¾ inch trimming knife, however, is a good length for small tasks, like trimming fat from cuts of meat.

The 5 inch boning knife is a good knife. I think this knife is slightly more useful for the everyday cook than the cleaver. I find this knife useful for both boning and fat trimming.

The bread knife, is a great knife. Many people think tomatoes are the hardest food items to clearly cut. I think bread is much more difficult; but this knife makes the task seem easy. This set includes the 9 inch knife that I prefer over the 8 inch.

When it comes to sharpening steels, I have found very little difference between Henckels and Wusthof. As long as you buy a high end steel, you really won't go wrong. Therefore, I shop for this item on price, and Henckels has a price advantage. However as the steel comes with the set, you won't go wrong with this steel.

This set is as complete as they come. If you can afford it, I highly recommend it.

5for a cooking couple, it's worth the money

I didn't buy my Wusthof knife collection as a set, but I wish I had. This block set includes everything I've aquired over the years, plus a couple of items that are still on my wish list. It may sound like overkill, but nothing here (with the exception of the steak knives) is redundant or unneeded in a well-stocked kitchen. The only improvement I would make is to add a second paring knife.

THE BROAD BLADED (CHEF'S) KNIVES:

-- Which chef's knife to use depends on the size and balance of your hand, and how fine the task will be. Petite and average-sized women tend to prefer the 5 or 6-inch blade, average-sized and large men tend to prefer the 8 or 10. (Most sets ship with the 8). If you are a cooking couple, these four will provide a knife comfortable to both sets of hands, and appropriate to both coarse tasks (such as cutting up a watermellon or large squash, or opening a wheel of cheese) and fine ones (chopping an onion, slicing up a bunch of veggies for stir-fry).

THE NARROW BLADED KNIVES:

-- The 3.5-inch paring knife gets used for everything. Trimming and cleaning vegetables, mincing small amounts of herbs, creating garnishes, and other places where a chef's knife would be too big and unwieldy.

-- The 4.5-inch utility knife works as a paring knife for a larger hand, with a longer blade and a heavier handle. A smaller hand may prefer this to the boning knife for boning.

-- The 6-inch sandwich knife is appropriate for sandwiches (spreading filling and spreads, and cutting sandwich meats as well as the finished sandwich), but is also useful for carving chicken or cutting pies.

-- The 8-inch carving knife is for slicing roasts or turkey, but will also work well for cakes, including cheesecake. (Use the sandwich knife for carving chicken).

THE SPECIALTY KNIVES:

-- The boning knife has a narrow blade to slip around and between bones and tendons. Use this for raw meat - use the carving or sandwich knife for cooked stuff.

-- The tomato knife is serrated to cut through tomato skins without crushing, and forked to serve the slices afterward. It also works well on salami and sausage (the edge is the same as the Wusthof sausage and brunch knives, though those don't have a fork). I prefer it for citrus over the utility knife, since it also won't crush the delicate pulp.

-- The bread knife cuts through tough bread crusts without crushing the delicate inside of the bread, and can also be used as a larger tomato knife.

-- The flexible filet will slip easily under the ribs of fish or poultry, and can also be used for skinning.

-- The cleaver is for even heavier chopping tasks than the chef's knife - cutting right through bones or very tough vegetables like sugar cane. Use the flat of the cleaver to crush garlic, and the back of the cleaver to hammer meat to tenderize it, or to pound ginger or galangal before putting it in the pot. (Unlike a real chinese cleaver, this one doesnt' have the front edge sharpened, so you can't use it as a spatula).

-- The peeling knife (also known as the "bird's beak") is not only for peeling thick veggies like broccoli stalks (use a regular veggie peeler for carrots), but also just the right thing for trimming delicate herbs and mushrooms - any task where the cutting surface is the curve of your thumb and not a cutting board. The sharp point and thin profile also make this best for cutting out the cores and stems of peppers or thin-skinned squash.

Other reviewers have commented on the dishwasher-ability of the Wusthof Classic line. I've been washing my knives in the dishwasher for many years, and the rivets do corrode eventually from the detergent. The blades do just fine, however (as long as you have a basket to keep them from knocking together). Hi-carbon stainless is a compromise between stainless (which can't hold an edge) and carbon steel (which first turns black from soap, and then dissolves into a pile of rust if not dried right away). The choice of how much work you're willing to put into your knives is up to you.

It's true that a new cook can survive with a chef's knife and a paring knife, but if you can afford this, get it.

4I had to add my two cents here

Straight up, I do not own this exact set, but I do own some of the knives in the set. I was obliged to make a comment because of another review. I like the Wusthof line, and think that they are of impeccable quality. I also feel that there are knives of equal quality available at far less cost. Be that as it may, I wanted to pass along that my ex wife and I bought a Cutco knife set early in our marriage (for a small fortune), and I cannot for the life of me understand how ANY reviewer could even begin to compare them to a proper forged knife set. For years, I thought that I had really bought the best, until I was introduced to a quality forged knife. There is no comparison in the overall handling and performance. To understand the benefit of a proper forged knife, you really have to try one. Don't get me wrong, the Cutco knives are among the finest of the stamped steel knives, and have a great warranty, but their price is based on the way they are marketed (like the old whole life insurance policies), and they are not in the same utility class as a forged knife set. Buy Wusthof or a more value oriented brand of forged knives and sleep well. Leave the stamped steel knives to the newlyweds.

4Good Knife, Not Balanced Well

There are really two main competitors in the high-end mainstream kitchen knife market: Henckels and Wusthof. Those who have used both usually have a preference. My preference (and therefore bias you should know about) is for the Wusthofs.

The Wusthof Classic line is the more conservative counterpart to the Grand Prix line. The only difference, however, is the handle style. I personally prefer the Grand Prix, but this is an issue of personal preference. The balance and grip of these knives are as close to perfect as I have found. For those wondering what benefits a higher priced knife provides, one benefit is that the blade (or tang) is one piece all the way through the handle. This makes the blade much stronger, and less likely to snap.

This particular model, the 10 inch slicer, is too long and thin. The balance is not right, and it is difficult to control. This knife is high quality, but too long.

Finally, there are really few uses for this knife where either a chef's knife or a shorter knife would not be a better choice. Great knife, bad size and balance.

Best 10" chef on the market: the Classic line has good handle weight and nice heft, and the scales are medium enough for small/med sized man hands to use with confidence. I find the Grand Prix to be a bit on the big side in the handle dept. Where this knife is a winner is: blade profile, steel characteristics, and edge grind.If you compare this to, say, a Henckles 10" Chef, you'll notice that the Wusthof has a deeper, rounder 'belly.'This roundness enables the knife to rock back and forth (is that 'roll' back and forth?) for dicing with *much* greater ease than the Henckles, which tends to fall to the board and need to be picked up again, again, again.The Wusthof steel, I think, has a touch more carbon than the Henckles, and a little less Chromium. It takes a second to touch up - effort that is rewarded by superior cutting performance, with a higher edge grind. That said it is not fragile.The Wosthof blade is slightly hollow ground, whereas the Henckles is slightly convex, which causes the Henckles to 'split' more than 'slice' hard vegetables like carrots and radishes. I've been using a 10" on and off since 1989. . . and I love it.

This particular model, the 10 inch cook's (or chef's) knife, is a good knife. Wusthof offers four sizes of chef's knives in the Classic line, 5, 6, 8 and 10 inch. For most home cooks, I think the 8 inch knife is the best choice. This knife, the 10 inch, is a bit big for most jobs. The 5 and 6 inch are a bit small for bigger jobs. While the 8 inch isn't perfect for all uses, if you are only buying one size chef's knife (and most people only buy one), the 8 inch is the knife I would recommend.

Therefore, if you are buying your first cook's knife, I would recommend the 8 inch size. This is a great knife, but I don't think the size is right for mainstream users.

Yes, the price of a Wusthof Classic is intimidating, and yes, you will feel buyer's remorse...until you use it for the first time. Even for the casual cook, the difference between a Wusthof and even a middlin' fair brand must be experienced to be appreciated. I bought one for my father (who never gets excited about ANY present, ever) for Christmas; and he hasn't stopped thanking me yet. That in itself made it well worth the price.
