5A Smaller, Useful Pan

After getting the 10-inch version of this pan, I found a great deal on the 8-inch pan and picked it up for smaller jobs in the kitchen. This was a great decision.8 inches *is* small for a lot of cooking and this shouldn't be your primary fry pan but it is great for doing smaller jobs on the side or for cooking up things for one or two people. I use this guy for eggs, meat and more. The pan heats really evenly and feels great in my hand. The handle does a great job of dispersing heat and staying cool, too. And, though it doesn't come with a lid, the medium lid from the All Clad pots fit it well.When things do stick, I don't worry about attacking it and scratching off the surface. I can use a scraper, sponge, or scouring pad without any problems. Metal can be used but it is more likely to scratch. And it is safe in the dishwasher although I recommend handwashing as much as possible.Some cooking tips I learned with this type of pan: Use a lower heat, not because you have to (like with non-stick), but because it heats so evenly, you often don't need that higher temperature. Also when you throw something in, whether you are using butter, oil, a spray, or nothing, let it sit and cook a bit before you try to move it around. Hamburger, for example, will adhere to the pan at first and if you try stirring it up right away, small pieces will be stuck and are more likely to burn. Rather, wait until it has a minute or two to cook on that side. The parts that adhere will cook, separate and lift away from the pan so you can stir it easier. And when you are done, if there is any food stuck to the pan, put some water in it and let it boil for a few minutes. This will help lift it off and make cleaning easier.Again, a great pan, a great brand, and definitely worth the money since it will last you a lifetime with the warranty they give you.

5All-Clad Stainless 8" Fry Pan

This small frypan is my main item. I cook for myself only (usually) and if anyone out there wants to try out the All-Clad line of cookware, this is the one to start with. Once you do, you, as I, will want to expand your collection of this superior product. You can get messy with it; you can make a mistake & have the heat too high, you can even leave it in the sink uncleaned for a day or two.....it will still clean up easily and look brand new. As stated in the ads, the handles really do stay cool; that's a nice change of pace! Not to mention the fact that the company is still in business; the lifetime guarantee really means something! Did I forget to say that this cookware is simply "beautiful?"

For most home chefs, All-Clad is the superior line of cookware. All-Clad stainless steel fry pans are excellent because they conduct heat so well. This 8-Inch pan is a good try-me size. I use it when cooking for myself or for making a 2-3 egg omelette.

4Excellent pan; couple quirks

I'm not 100% convinced that the copper core is worth the premium price tag when the aluminum core Master Chef line performs about as admirably in terms of evenness of heating, but this one was in stock and the other one wasn't, so the choice was simple.It's a tiny little guy, but a solid performer. It came up to temperature quickly, and my infrared thermometer showed the sides staying within 5-10 degrees of the bottom at all times with no significant hot or cold spots anywhere. I elected to prepare a very simple dish--Farina with coconut milk and palm sugar--for its maiden voyage, and it cooked well without any scorching at all. I actually had a hard time telling when it was done because of the complete absence of bubbles--something I'm used to seeing with my old pan which has hot spots a'plenty.Some people have complained that All-Clad's 1-quart sauciers are off balance and easy to tip. While a bit of pressure on the end of the handle will indeed lift the front off the range by about an inch, you'd really have to knock it pretty hard to actually slosh anything out of it, and every other similarly sized pan I've ever tried exhibited identical behavior. It absolutely does not wobble around of its own accord and I wouldn't worry about it tipping any more than any other pan you might own.My only real gripe is the handle. I hate all of All-Clad's handles; they're not only uncomfortable, they actually hurt. Using a towel mitigates this somewhat, but the whole point of the stay-cool riveted handle is to eliminate the need for such measures. This one loses extra points because the rivets are simply too large for a pan this size. They jut out way too far and make both stirring and scraping down the sides a tedious, noisy affair. A minor annoyance, but an annoyance nonetheless.All in all, it's a great pan and it runs circles around the old Calphalon pile of junk it's replacing. It's also made in America and boasts a lifetime warranty, so if you ever manage to stir your way down through to that precious copper, you'll get a new one. Just make sure you realize there is NO LID for this model; gotta step up to the 2-Quart for that.P.S. DO NOT ATTEMPT TO DEEP FRY ANYTHING IN THIS PAN. I just had a late night falafel (yes, I know that falafel is not a sauce) preparing incident and while the pan performed as admirably as ever, the fact that the sides conduct so much heat means that all the oil splatter that would ordinarily just kinda sit there until you washed it off BAKES onto the surface. It's not ruined or anything, but man what a lot of scrubbing.

4Other All-Clad lids DO NOT fit

They make it clear that this one does not come with a lid, but I would have never guessed that none of their other lids would fit. I have both the 6" stainless lid and the 6-1/2" copper core lid and neither fits. The 6-1/2" that comes with their small copper core saucepans comes closest, buth the shape of the lip (and 1/2" larger pan diameter) make it a precarious balance. Otherwise a very nice pan. I also find the copper core handle with the added bump on the bottom to be a lot more comfortable than their stainless handles.

5A Small Sensation!

I own several pieces from the Copper Core line, and bought this piece simply because I found an incredible price on it. I didn't expect to use it often, as I tend to reach for my small saucepans; I just thought this saucier was just too small for much of anything. But I have surprised myself with this one! I have melted chocolate, made small batches of glazes, a cooked vinaigrette, and always use it now for my reduction for blender bernaise. It comes in handy more than I expected, and the long handle is especially convenient (and not typical) on cookware of this size. It is quickly becoming a favorite piece. And like my other AC Copper Core, it heats beautifully and evenly on low to medium heat, and is a delight to cook with.Don't hesitate if you are wondering about the size - you will find many uses and love this little gem.

5Maybe the best cooks tools ever UPDATE

I can find nothing to take to task on the All-Clad tools. I have nearly all the tools they make and I like them all. They are easy to clean, no nooks for stuff to get stuck. They fit well in the hand and have a substantial, but not heavy, feel to them. Their shape is very good for the task at hand. The sole negative is their price but when balanced against the good, including the fact that they should last longer than the cook, they are a bargain at the price.UPDATE!! WE have had these tools more than 12 years now. They STILL look like new. Daily use and no signs of wear beyond a few scratches. These are the BEST!

5What an awesome set of tools

How many times have you reached for your favorite tool and found it was in the dishwasher or sink, waiting to be scrubbed clean? How many spoons have you purchased and tossed away?

Stylish and easy to clean, these heavy-duty tools are great. I was pleased to see that their handles mimick the handles to my all clad pots. The container is also large enough to accomodate more tools (start shopping).

Quick re-use eliminates the turnaround time with other tools. I think these will last longer since there is no wood to split, no screws to snap, and no plastic to get stained and funky.

Nice gift, since it arrives in a large, colorful cylinder package. Another hit!

4Quality tools, anemic canister

Restaurant-supply quality tools (overlooking that restaurant suppliers' tools often aren't twenty bucks a pop or quite as heavy). Their weight and the size of the spoons may take some getting-used-to, but as others have stated once you do anything of lesser quality just won't do.

Each tool's handle is pierced for hanging, plenty long enough for stockpots, and stay cool. The turner is ridged with a beveled edge; unsuitable for serving up pie, but great for flipping burgers or scraping loose the fond when deglazing. The canister, by comparison, is too light-weight and tips if balance isn't maintained, unlike the Le Creuset canister, which easily handles the weight of these five tools however they're plunked in.
